  • 1/2 cup (1 stick) salted butter
  • 1 cup brown sugar
  • 2/3 cup heavy cream
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon salt

How to cook:
  1. In a medium saucepan set over medium-low to medium heat, melt the butter. Mix in the brown sugar and stir for 2 minutes. Mix in the heavy cream and stir continuously for 2 more minutes (the sauce should be gently bubbling, so adjust the heat, if necessary). Remove the pot from the heat and stir in the vanilla and the salt until well incorporated.
  2. Pour the hot caramel sauce into a jar and allow it to cool completely. Cover and store in the refrigerator for up to a month.

How to cook:
  1. In a heavy bottomed sauce pot over medium heat, add the butter, sugar, brown sugar, Karo syrup, sweetened condensed milk and salt.
  2. Cook over medium heat, stirring with a flat bottomed wooden spoon or a rubber spatula. Be sure and scrape the bottom of the pan constantly until all of the sugar is dissolved and the butter is melted.
  3. Increase to high heat and cook the caramel mixture, stirring constantly, until it reaches 225 degrees F on a candy thermometer.
  4. Take the caramel off the heat immediately to stop the cooking.
  5. Once it reaches 225 degrees, remove from the heat immediately to stop the cooking. Allow it to cool for at least 20 minutes before serving. Or, cool completely and then store.

How to cook:
  1. Prepare a bowl of ice water. Set aside.
  2. Bring water to boil in a saucepan. Place an apple in the boiling water for 10 seconds. Use tongs to remove it from the hot water. Use a rough towel to rub the wax off of the apple. Then place it in the ice water to cool. Repeat with the remaining apples.
  3. Dry off the apples and insert a skewer or popsicle stick into each apple. Place in the refrigerator to chill.
  4. In a very, large microwave-safe bowl, put the butter, sweetened condensed milk, sugar, and corn syrup. Microwave on high for 5 minutes and then stir.
  5. Microwave at 50% power in 5 minutes intervals for 15-25 minutes total, or until caramel reaches 238˚F to 244˚F on a candy thermometer. Note: If you have a more powerful microwave, you may need to reduce the power to 30%.
  6. Remove from the microwave and stir in the vanilla extract.
  7. Dip the apples into the caramel all of the way to the stick. Gently twirl the caramel apple back and forth to allow the excess caramel to drip off. Then, flip the apple upside down (like a lollipop) and hold it like that for 20-30 seconds. Finally, place them on a parchment covered tray or rimmed baking pan and return them to the refrigerator.
  8. Store caramel apples in the refrigerator.

  • 8 ounces corn syrup
  • 2.5 ounces unsalted butter

How to cook:
  1. Day 1 - Apple Preparation
  2. Bring a large pot of water to almost a boil then remove it from the heat
  3. Submerge your apples in the water for 1 minute to remove the wax from the apples.
  4. Dry the apples well, rubbing with pressure to make sure all the wax is removed.
  5. Remove the stems from the apples by twisting them off.
  6. Place your stick into apples, making sure the apple stands up straight up. Give your apple a little shake to make sure the stick is secure.
  7. Place all your apples onto a sheet pan lined with a silicone mat and put them into the fridge to chill overnight or until you are ready to dip your apples.
  8. Day 2 - Making Caramel Apples
  9. In a heavy bottom sauce pan, combine the brown sugar, corn syrup, cream, salt, and butter.
  10. Over medium-high heat stir the mixture until butter has melted and then continue to cook the mixture without any further stirring.
  11. Use a clean pastry brush with water to wash down the sides of the pot to prevent crystalization.
  12. Place the lid on the saucepan and let the mixture boil for 5 minutes. The condensation will also wash down the sides of the pot to prevent crystalization.
  13. Attach your candy thermometer to the side of the pan and continue to cook the caramel until it reached 240-245ºF
  14. Remove the caramel from the heat and stir in the vanilla, taking care not to burn yourself as the caramel will bubble up when you add it.
  15. Let the caramel cool down for 5-10 minutes. It will be ready to dip around 190-200ºF. If your caramel is too runny, allow it to cool for 5 more minutes, it will continue to set up.
  16. Using an oven mitt to hold your pot of caramel at an angle, gently roll your apple in the caramel until evenly coated.
  17. Let the excess caramel drip off the bottom and gently scrap the excess on the edge of the pan before placing the apple on the silicone mat to cool.
  18. Let the apples cool completely. Placing the apples in the fridge will speed up the cooling, however you need to wrap them after coming out of the fridge or they will condensate. Apples will last in the fridge in an airtight container for a few days.
