Ingredients:
- ¾ cup diced and seeded cucumber
- ¾ cup diced green bell pepper
- ¼ cup diced white onion
- ½ cup apple cider vinegar
- 2 tablespoons cane sugar
- ¾ teaspoon mustard seeds
- ¾ teaspoon sea salt
- ¼ teaspoon red pepper flakes
- ⅛ teaspoon celery seed
How to cook:
- In a small pot, combine the cucumber, bell pepper, onion, and ¼ cup of the apple cider vinegar. Bring to a simmer and cook for 10 minutes, stirring occasionally. Drain and discard any excess liquid.
- Return the veggies to the pot and add the remaining ¼ cup apple cider vinegar, the sugar, mustard seeds, salt, red pepper flakes, and celery seed. Simmer for 5 minutes.
- Remove the relish from the heat and let cool to room temperature. Chill until ready to use.

- 1 bell pepper (chopped fine)
- 1-2 dill pickles (chopped fine)
- 1 cup green cabbage (finely shredded)
- 1/4 cup chopped onion (chopped fine)
- 1 tablespoon apple cider vinegar
- 2 tablespoons yellow mustard
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground pepper

Ingredients:
- 4 cups cucumbers
- 1 cup green pepper
- 1/2 cup red pepper
- 3 cups onion
- 3 cups celery
- 1/4 cup salt
- 1 3/4 cup honey
- 2 cups vinegar
- 1 tablespoon celery seed
- 1 tablespoon mustard seed
- 1 tablespoon ground coriander
How to cook:
- Gather ingredients. Finely chop all the vegetables.
- Combine in a large bowl. Sprinkle with salt, cover with cold water, and let stand five hours or overnight.
- Drain thoroughly in a colander, pressing out excess liquid.
- Combine honey, vinegar, and spices. Bring to a boil. Stir in drained vegetables and simmer for 10 minutes.
- Pack into hot sterilized jars to within 1/2 inch from the top.
- Complete Seals. Process for 10 minutes in a boiling water bath.
- Remove from canner to a kitchen towel placed on the countertop.
- Allow to cool completely. Remove rings, label and store in a cool, dry dark location.
