  • 6 vegetarian sausages
  • 1 tbsp honey
  • 1/2 tbsp wholegrain mustard
  • Salt
  • Black pepper

How to cook:
  1. Start cooking the sausages in the oven, according to the directions on the packet - probably something like 190°C (Gas Mark 5 / 375°F).
  2. In a small bowl, combine the honey and mustard, with a small pinch of salt and pepper. Mix well.
  3. When the sausages are half cooked, remove them from the oven, and pour over the honey and mustard glaze. Coat the sausages in the glaze, then return them to the oven for the remaining cooking time (around 15 minutes). Don't worry if any excess glaze on the baking tray burns a little.
  4. When the glaze is hot and sticky, serve the sausages with your choice of side dish.

Honey Mustard Cocktail Sausages

Ingredients:
  • 300g cocktail sausages
  • 1 teaspoon vegetable oil
  • 1 tablespoon runny honey
  • 1 tablespoon grainy mustard
How to cook:
  1. Collect together your equipment (see Recipe Notes below) and ingredients.
  2. Preheat oven to fan oven 180°C /200°C/400°F/Gas 6
  3. Lightly oil the baking tray with the vegetable oil. If food is prone to sticking on your tray, cover with baking parchment.
  4. Spread the cocktail sausages out on the baking tray and cook in a preheated oven for 10 minutes.
  5. After 10 minutes, remove from the oven and tip into a mixing bowl. Mix thoroughly with the honey and then the mustard.
  6. If the sausages have released a lot of fat, wipe this off the baking tray. Tip the sausages back onto the tray, making sure they are spread out well.(If preparing in advance: cover the tray and store in the fridge until you are ready to cook them. Preheat the oven and continue as below.)
  7. Put back in the oven and cook for a further 10 – 15 minutes or until cooked through and lightly caramelised.
  8. Serve hot with some cocktail sticks for easy eating!

  • 12 pork chipolatas (or 24 raw cocktail sausage )
  • 12 slices of smoked pancetta or smoked streaky bacon
  • 24 fresh sage leaves (really large ones can be halved)
  • 2 Tbsp wholegrain mustard
  • 1 Tbsp honey
  • 1 Tbsp rapeseed/olive oil (to grease the baking dish)

How to cook:
  1. Making Cocktail Sausages out of Chipolatas (optional)
  2. Squeeze each of your chipolata sausages gently in the middle. Take care not to break the casing.
  3. Twist it around couple of times to separate your chipolata into two cocktail sausages.
  4. Cut into two!
  5. Preparing Party Sausages For Baking
  6. Preheat the oven to 180C/350F/Gas Mark 4.
  7. Take a slice of bacon/pancetta and put it on the cutting board. Stretch it gently first and then cut in half.
  8. Place fresh sage leaf at the bottom end of each half of bacon/pancetta and put your cocktail sausage on top.
  9. Starting from the bottom, roll your sausage in bacon/pancetta making sure that bacon overlaps nicely and covers all of the sausage.
  10. Repeat with all remaining bacon slices and sausages.
  11. Baking & Glazing
  12. Grease your large baking dish or tray with 1-2 tablespoons of rapeseed/olive oil and arrange your prepared pigs in blankets in the dish.
  13. Roast in preheated oven for approx. 25 minutes until browned and cooked through.
  14. While your sausages are roasting prepare honey and mustard glaze by mixing mustard and honey together in a small bowl. Set aside.
  15. Once your sausages had 25 minutes in the oven take them out and increase the oven temperature to 200C/400F/Gas Mark 6.
  16. Pour the glaze over the sausages and move them around with spatula or shake the dish around a bit so that they are nicely covered in glaze.
  17. Pop them back in the oven for 5-10 minutes (depending on your oven) turning them over half way through. Make sure you watch them at this point.
  18. Serve hot or at room temperature as party food or side dish and dips of your choice.
