Ingredients:
  • whole chicken wings
  • Traeger Pork & Poultry Rub
  • (1/2 stick) unsalted butter
  • garlic cloves, minced
  • honey
  • hot sauce
  • Blue cheese or ranch dressing, for serving
How to cook:
  1. Step 1
  2. When ready to cook, set the Traeger temperature to 350℉ and preheat with the lid closed for 15 minutes. Line a rimmed baking sheet with nonstick foil or parchment paper.
  3. Step 2
  4. Segment the wings into three pieces, cutting through the joints. Discard the wing tips or save to make chicken stock. Season the flats and drumettes well with Traeger Pork & Poultry Rub, then arrange in a single layer on the prepared baking sheet, spacing evenly.
  5. Step 3
  6. Place the baking sheet with wings on the grill grates. Close the lid and cook until the wings are no longer pink at the bone, 45-50 minutes.
  7. Step 4
  8. Meanwhile, make the sauce: Melt the butter in a small saucepan over medium heat. Add the garlic and sauté until fragrant, 2-3 minutes. Add the honey and hot sauce and cook until completely combined, 2-3 minutes more. Remove the pot from the heat and cover to keep the sauce warm until the wings finish cooking.
  9. Step 5
  10. Transfer the wings to a large bowl. Pour the spicy honey garlic sauce over the wings, turning with tongs to coat.
  11. Step 6
  12. Return the wings to the grill, arranging directly on the grates. Close the lid and and cook until the sauce sets, 10-15 minutes.
  13. Step 7
  14. Remove the wings from the grill. Serve with ranch or blue cheese dressing. Enjoy!

Yields: 2 servings
Cuisine: American
Number of ingredients: 11
Ingredients:
  • ¼ cup of butter, unsalted
  • 1 cup BBQ Sauce – I used Sweet Baby Rays Original but feel free to us any you like!
  • ½ cup honey
  • 2 tbsp ketchup
  • 2 lbs chicken wings
  • 2 tbsps cornstarch
  • 1 ½ tsp salt
  • 1 ½ tsp pepper
  • 1 ½ tsp chili powder
  • 1 ½ tsp smoked paprika
  • 1 ½ tsp garlic powder
How to cook:
  1. How to Make the Sauce
  2. Begin by melting butter in a pot over medium heat. Add all remaining sauce ingredients and combine using a whisk. Once it begins to bubble, turn down the heat in a simmer for about 10 minutes. Turn off the heat and set aside until ready to toss with the wings.
  3. To be prepared, I find it helps to pour the sauce into a large mixing bowl. That way, as soon as the wings are finished cooking, you can toss them and serve right away.
  4. Prepare the Wings for Cooking
  5. Note
  6. If you’re planning on baking your chicken wings, you’ll need to boil them in water for about 10 minutes before moving on to the next step. This step is not necessary if you’re frying the wings.
  7. Pat chicken wings with paper towel to remove excess moisture. The more moisture you remove, the better! This will help them become crisp!
  8. In a medium mixing bowl, combine the cornstarch, salt, pepper, chili powder, smoked paprika and garlic powder.
  9. Add the wings to the bowl and toss with the cornstarch mixture. Set aside until ready to cook (deep fry, bake, etc. – see below).
  10. How to Deep Fry Chicken Wings
  11. Preheat the deep fryer to 375°F.
  12. Add wings to the frying basket and place them into the fryer. Cook for about 10-15 minutes. Please keep in mind, depending on the size of your frying basket; you may need to cook the wings in batches – that’s how I do it!
  13. Once the wings have cooked, allow them to drain for a few minutes.
  14. Toss the wings in a mixing bowl along with the Honey BBQ sauce, then transfer to a serving plate and serve.
  15. How to Bake Chicken Wings
  16. Preheat the oven to 375°F
  17. Reminder
  18. Before baking the wings (as mentioned under the “Prepare The Wings for Cooking” section above), you’ll need to boil them – This will help remove excess fat and liquid from the wings and result in the best texture. Fill a large pot with water and bring it to a boil. Add the chicken wings and cook for about 10 minutes. Remove the wings from the pot, allow them to drain, then pat them completely dry with paper towels. Next, toss them in the dry seasonings described in the “Prepare the Wings for Cooking” section above.
  19. Place the wings on a wire baking rack (like this one) on top of a baking sheet.
  20. Place the seasoned wings on the rack – try to place them, so none are touching. Giving space between them will help them crisp up. 🙂
  21. Bake for 20-25 minutes, or until crisp to your liking.
  22. Once they’ve finished baking, in a mixing bowl, toss the wings in the prepared wing sauce and place them back onto the wire rack on the baking sheet.
  23. Place the wings back in the oven and Broil for 6-8 minutes. You want the heat to “glue” the sauce to the wings. 🙂

How to cook:
  1. Fire up your Traeger and set it to smoke.
  2. Liberally coat the wings in the adobo seasoning. Place on the grill and smoke for 2 hours, turning once halfway through the smoke.
  3. Remove the wings from the smoker, and preheat your oil to 375 if you haven't already.
  4. Drop the wings in small batches and fry for 4-6 minutes, or until the skin is crispy. The chicken should be cooked to about 160 - 180 degrees from the long, slow smoke, but this final fry will also ensure they are cooked through as well.
  5. Remove from the grease, let drain, and then toss in your favorite wing sauce. I recommend my Cholula Buffalo Sauce!
