  • 3 tablespoons fresh lemon juice
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon salt

  • 3 1/2 to 4 cups cooked chicken, cut into bite-size pieces
  • 2 cups shredded Parmesan cheese, divided
  • 1 cup chopped celery
  • 1/2 cup chopped scallions (white and tender green parts)
  • 1/2 cup slivered almonds
  • 1 (4-ounce) jar pimentos, drained
  • 2 cups (4 ounces) potato chips
How to cook:
  1. Heat the oven to 350°F. Lightly grease a 2 1/2-quart baking dish or mist with cooking spray.
  2. In a large bowl, whisk together the soup, mayonnaise, mustard, lemon juice, salt, and pepper.
  3. Fold in the chicken, 1 cup cheese, the celery, scallions, almonds, and pimentos. Transfer into the prepared baking dish.
  4. Sprinkle with remaining 1 cup cheese. Crumble the chips evenly over the top.
  5. Bake for 25 minutes or until the top is golden brown and the filling is hot. Let stand 5 minutes before serving warm.

  • 4 cups cooked diced chicken
  • 1/2 cup finely chopped celery
  • 1 tablespoons grated onion
  • 1 cup mayonnaise
  • 1 (10.75-ounce) can condensed cream of chicken soup
  • 1 tablespoon lemon juice
  • 1/2 teaspoon black pepper
  • 1/2 cup slivered almonds
  • 1 cup shredded cheddar cheese
  • 1 (8-ounce) can water chestnuts, (drained and chopped)
  • salt
  • 1 1/2 cups coarsely crushed potato chips, (plain or ruffled)
How to cook:
  1. Preheat oven to 350 degrees and grease an 11X7-inch casserole dish.
  2. Combine all ingredients except salt and potato chips in a large bowl. Stir well.
  3. Taste the mixture and add salt to taste. You will probably want to add between 1/4 and 1/2 teaspoon depending on the saltiness of your chicken and your preference for salt level.
  4. Transfer mixture to prepared pan. Sprinkle crushed potato chips on top.
  5. Bake 25 minutes. Serve warm.

  • 3 cups cooked chicken, shredded or chopped
  • 1 cup sharp cheddar cheese, grated
  • 1 cup potato chips, slightly crushed
  • 1 1/4 cups mayonnaise
  • 1 cup celery, finely chopped
  • 1/4 cup bacon, cooked and crumbled
  • 1 tablespoon dry ranch mix
  • 1/2 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon onion powder
  • kosher salt and freshly ground pepper, to taste
How to cook:
  1. Preheat oven to 350º F and lightly grease a square baking dish with butter or non-stick spray.
  2. Place chicken, cheese, celery and bacon in a large bowl.
  3. In a smaller bowl, whisk together mayonnaise, ranch mix, lemon juice, Worcestershire sauce and onion powder, and season with salt and pepper.
  4. Stir mayonnaise mixture into chicken until everything is evenly coated, then transfer everything to greased baking dish.
  5. Top baking dish with crushed potato chips, then place in oven and bake for 25-30 minutes, or until mixture is hot and bubbly and cheese is melted.
  6. Remove from oven and serve hot.
