Ingredients:
- 6 tablespoons (89 mL) olive oil (can be substituted with bacon fat or duck fat)
- 2 pounds (0.91 kg) purple potatoes, washed (can mix in other baby potato varieties if desired)
- 1 large shallot, sliced
- 2 tablespoons (30 mL) flour
- Salt and pepper
- Diced chives
How to cook:
- Start heating your oil by preheating the oven to 400 °F (204 °C). Pour the olive oil into a roasting pan and set it in the oven to warm up. This will speed up the roasting process so you can enjoy the potatoes sooner. Preheating the oil also ensures that your potatoes will stay crispy instead of getting soggy.
- Set your potatoes in a large pan, add water, and boil. Pour enough water in the pan to just barely cover the potatoes. Add a pinch of salt and a splash of vinegar and turn up the burner to high. The water should begin to boil after about 10 minutes. At that point, lower the heat to medium-low and simmer the potatoes for a few minutes. Boiling your potatoes first lets you start the cooking process early to make sure that they bake all the way through.
- Drain the potatoes in a colander and add flour, salt and pepper. Stir the potatoes with a fork to spread the flour, salt, and pepper around.
- Take the pan from the oven and add the potatoes and shallots. Remove the pan with oven mitts, and add the shallots before you scoop in the potatoes. The oil will be hot and the potatoes and shallots will sizzle when they make contact, so keep a bit of distance and use caution. Your shallots should be sliced long and thin. They’ll end up nice and crispy after roasting!
- Bake the potatoes for 15 minutes on each side. Place the pan back in the oven and let your potatoes roast for 15 minutes. Remove the pan, flip over the potatoes, and let them roast for another 15 minutes before serving!

- Prepare the potatoes by peeling them if desired (you can also leave the peels on), removing any bruised areas, and cutting them into 2-inch pieces. Place them in a large pot, cover with water, add up to 1/2 tsp of salt, and bring to a boil. Let them boil for 15 to 17 minutes until fork-tender.
- In the meantime, combine the milk and butter in a small saucepan over low heat. Cook until the butter is melted, then remove from heat, being careful not to let the mixture boil.
- When the potatoes are cooked, drain and return them to the pot. Pour in the milk and butter mixture, and mash the potatoes with a handheld masher or a handheld electric mixer (for a creamier texture) until smooth. Taste, and add salt, pepper, more butter, and fresh herbs as desired. For additional flavor, consider adding up to 1/2 cup sour cream. Enjoy warm!

Ingredients:
- 1 1/2 lb purple potatoes ((washed and scrubbed; unpeeled))
- 1 1/2 tbsp olive oil ((or avocado oil))
- 1 1/2 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp dried thyme
Nutrition:
- Calories: 162 kcal
- Serving Size: 1 serving
- Preheat the oven to 400 degrees F.
- Place the whole purple potatoes in medium pot, and fill with water until just submerged. Bring to a boil, then set a timer for 5 minutes (for small/medium potatoes; if using large potatoes, use 8 minutes).
- When the timer goes off, the potatoes should be just barely tender when poked with a fork – there should still be some resistance. Carefully remove the potatoes from the boiling water and dry. Chop into 1-inch pieces, leaving the skin on.
- Place the chopped potatoes in a bowl and add the olive oil, dried rosemary, salt, garlic powder, and dried thyme. Toss potatoes well to equally coat in oil and seasonings.
- Spread the potatoes onto a baking sheet and place in the oven. Cook for 20-30 minutes, stirring once at the 15-minute mark, until potatoes are fully cooked (crisp on the outside and soft on the inside). Let cool for a few minutes then enjoy!
