Ingredients:
- 10 eating apples, washed and dried
- 1 large orange, peeled and broken into sections
- 2 cinnamon sticks
- 6 whole cloves
- 1 teaspoon freshly grated nutmeg
- Other spices, as desired
- Agave nectar, optional, to taste

- Gather the ingredients.
- Chop the apples into large chunks, core pips, peel and all. Put them into the slow cooker and cover with cold water.
- Put the spices into a small square of muslin or cheesecloth, tie with string pop the spice bag into the cooker and attach the string to the handle.
- Bring the water to a boil and once reached, turn the cooker down to low and cook for 6 hours. The cider is ready when the apples are falling apart. Turn the cooker off. Taste and sweeten with the agave if the juice isn't to your taste (you can also use honey or brown sugar if you prefer).
- Remove the bag of herbs. Using a fork or a potato masher, press the apples to release any held juices from the pulp.
- Line a fine sieve with cheesecloth and strain the apples and juice into a large container or jug. Serve warm with added slices of lemon and apples for decoration. Or, chill down for a cold drink.

This is a super simple recipe for DIY hard apple cider. You just need a few pieces of equipment, apple juice, yeast, and spices! This recipe comes together in just 15 minutes and ferments for about three weeks before aging and bottling.

Ingredients:
- 64 fl oz organic apple juice
- 75 grams organic brown sugar
- 1 tsp cinnamon chips (or 1 cinnamon stick)
- 5 small cloves
- 1 tsp whole allspice
- 2 grams cider yeast
How to cook:
- Clean and sanitize all of your equipment. I like to wash the jug with soap and water, allow it to air dry a bit, then rinse the jug with cheap vodka, and allow to fully air dry.
- Once your equipment is prepped, warm up 2 cups of apple juice in a small saucepan over medium heat.
- Once it’s warm (not boiling) add in the brown sugar and stir until dissolved.
- Carefully using a funnel, add the warm apple juice mixture to the jug.
- Add the spices to the jug and let them steep for 5 minutes.
- Pour the rest of the apple juice into the jug, leaving two inches of headspace (see pictures above).
- Add the yeast to the jug.
- Cap the jug and shake for about a minute.
- Remove the cap and place the airlock and stopper in the jug (see pictures above).
- After a few hours, you should notice bubbling in the cider and activity in the airlock.
- Allow the cider to ferment for 14 to 21 days until the bubbling has completely stopped.
- Remove the airlock and using a funnel, transfer the cider to a new, clean jug for aging. Be careful pouring, and try to pour gently, leaving the sediment in the bottom of the original jug.
- Allow the cider to age at room temperature for four weeks.
- Bottle the cider by following the bottling directions above this recipe.
- Age in bottles for about 3 weeks in the fridge.

- 6 cups apples (chopped pieces, cores, or peels from (preferably) a variety of apples)
- 6 to 7 tablespoons sugar or honey (1 tablespoon for every 1 cup of water used)
- 6 to 7 cups pure water (warm, but not hot)

- Fill Mason jar(s) 3/4 of the way with apples or apple scraps.
- Stir the sugar or honey into the warm water. Stir to dissolve.
- Pour sweetened water over the apples. Leave 2 to 3 inches of room at the top of the jar.
- Cover with cheesecloth, thin fabric or coffee filter and a rubber band or mason jar screw-top lid.
- Set in a warm dark place for 2 weeks. (Place on a warm surface, and cover with a tea towel. The smell is wonderful during this process.)
- After 2 weeks, strain out the solids, pressing on them gently to extract extra liquid. (Taste the vinegar at this point. It is super delicious!! It's basically a fermented apple cider!)
- With the solids removed, you will be able to ferment in a smaller jar. Cover with fresh cheesecloth. Set the fermenting cider in a warm dark place for about 4 weeks.
- The apple cider vinegar is complete when it has a strong apple cider vinegar smell and taste. Allow to ferment longer, if not.
