  • 8 slices Italian bread, (1/2-inch thick)
  • 1/4 cup olive oil
  • 1 clove garlic, (cut in half)
  • 2 cups fresh grape or cherry tomatoes, (diced, (or 3 to 4 Roma tomatoes, diced))
  • 1/4 cup freshly grated parmesan cheese
  • 1/4 cup basil ribbons, ((stack several basil leaves one on top of the other, roll them up tightly, and then slice into thin ribbons))
  • 2 cloves garlic, (minced)
  • salt and fresh ground pepper, (to taste)
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • balsamic glaze, (optional, for topping)

How to cook:
  1. Preheat oven to 400˚F.
  2. Line a baking sheet with parchment paper or foil.
  3. Using a pastry brush, brush each slice of bread with olive oil; transfer slices to prepared baking sheet, oiled-side down.
  4. Toast bread in the preheated oven for 8 to 10 minutes. Keep an eye on the bread so it doesn’t burn.
  5. Remove from oven; rub the cut side of the garlic cloves over each slice of toasted bread. Set aside.
  6. Transfer diced tomatoes to a mixing bowl.
  7. To the tomatoes, add cheese, basil, and garlic; stir.
  8. Season with salt and pepper.
  9. Add oil and balsamic vinegar; mix until thoroughly combined.
  10. Taste salad and adjust accordingly.
  11. Divide up the salad over the toasted bread slices, add just a drizzle of balsamic glaze over the top, and serve!

  • ¼ cup extra virgin olive oil

How to cook:
  1. Preparing the bread:
  2. Heat grill to medium, or heat oven to 400°F.

How to cook:
  1. Halve tomatoes then remove and discard the majority of the seeds. Chop tomatoes into 1/4-inch chunks then add to a medium bowl with a generous pinch of salt, a small pinch of black pepper, one tablespoon of the olive oil and the basil. Stir and let sit 10 minutes.
  2. Meanwhile, heat a grill pan over medium heat or prepare an outdoor grill for medium heat. Drizzle bread slices with the remaining tablespoon of oil and grill 2 to 3 minutes on each side until warmed through and grill marks appear.
  3. Rub one side of the bread while still warm with garlic — two to three strokes per bread slice should do it.
  4. Stir the tomatoes one more time; taste then adjust with more salt or pepper as needed. Spoon a generous amount onto each bread slice. Drizzle a little of the juice remaining at the bottom of the bowl over tomatoes and enjoy.
