Ingredients:
- Half-pound salted salmon
- Two medium tomatoes
- One large sweet onion
- Six stalks green onion
How to cook:
- Dice all the ingredients (salted salmon, tomatoes, onions, and green onions) separately. You want small, bite-sized pieces, think pencil eraser size.
- Put it all together into a big bowl.
- Lomi aka gently knead the ingredients together until well mixed. There is no need to salt or season because the salmon is already salted.
- Eat and enjoy!

- 1 ½ pounds salted salmon (or fresh wild caught salmon)
- 2 pounds fresh tomatoes (chopped and seeded)
- 1 cup chopped sweet onion (use Maui onion if available)
- 1 cup chopped green onion
- ¼ cup kosher salt (only if you can’t find salted salmon)
- Lime juice
- Crushed red pepper
- Sesame oil
- Jalapeno

- How to Make Salted Salmon: (Omit this step if you are able to buy Salted Salmon at the market.) Remove the skin from the salmon fillets. Then dice the salmon into ½ inch chunks. Set out a large bowl or container. Place 1 ½ cups of cold water in the bowl followed by ¼ cup of kosher salt. Stir the salt into the cold water until it is fully dissolved, about 2 minutes. It’s ok if there’s still a little salt at the bottom. You just don’t want the water to be cloudy.
- Mix the chopped salmon cubes into the salted water. Allow them to soak for 5 minutes. Then scoop them out of the salted water and place them in a colander to drain. Do not rinse. You can do this ahead of time, to further cure the salmon and create a firmer texture, but it is not necessary.
- While the salmon is draining, chop the tomatoes, and both types of onion.
- Wash and dry the large bowl. Then mix the salted salmon, tomatoes, sweet onions, and green onions together in the bowl. Cover and refrigerate for at least 30 minutes. Then toss and serve.

Ingredients:
- 1/2 lb. salmon (I used Pacific Wild-caught Sockeye!)
- Kosher salt*
- Dash of cayenne* (Optional: See Note)
- 3-4 meduim tomatoes (chopped)
- 1/2 medium sweet onion (chopped)
- 2-3 green onions (chopped)
How to cook:
- Prepare Salmon
- Wash off salmon. Generously salt salmon on both sides and rub in. Wrap tightly in plastic and allow to cure 8 hours (or overnight) in the refrigerator.
- Remove from fridge and soak in ice water for one hour, changing water after 30 minutes.
- Using a sharp, wet knife, chop salmon into small pieces. (About 1/4 inch)
- Finishing up
- Mix all ingredients together, massaging the ingredients together by hand to mix thoroughly. Chill in the fridge. Serve cold.
