- Preheat your deep fat fryer to around 150 celsius.
- Wash and cut your potatoes into chip shapes. I like mine about 1.5cm thick but if you're into chunkier chips then you might want to try 2-3cm instead. It's entirely up to you if you want to peel your potatoes first. Most traditional chippies will peel them first, but personally I like skin-on (it's less fussy too).
- Bundle up your chip-cut potatoes in a tea towel and try to remove as much excess moisture as you can from them.
- Add the potatoes to the oil until they're softened all the way through.
- Turn the deep fat fryer to the highest temperature setting possible and leave the chips in until they reach the optimal crunchiness.

- 600g potatoes
- Oil (optional)

- Slice the potatoes up - thick for regular chips, or thin for French fries. You can either peel the potatoes, or give them a good scrub and leave the skin on.
- Preheat air fryer to 200C/400F
- Wash them in cold water to remove the starch.
- Pat dry with kitchen towel or a tea towel.
- Optionally spray with some oil.
- Sprinkle with seasoning of your choice (chip seasoning, curry powder, paprika, salt and pepper).
- Transfer to the air fryer basket.
- Cook for 20 to 25 minutes, checking regularly and shaking/turning. Depending on the thickness of the chip, or how crispy you like them, you might want to cook them for longer.

- 3 kale leaves, rinsed and dried
- 1.5 - 2 tsp of olive oil
- salt & pepper for seasoning
How to cook:
- Preheat the oven to 175C/350F.
- Carefully remove kale leaves from the stems and ribs and break into bite-size pieces.
- Wash kale leaves and dry them in a salad spinner.
- Place the leaves in a bowl and add olive oil, salt and pepper. See below for more seasoning options.
- Toss the leaves with your hands to make sure that all the leaves are covered with oil evenly.
- Line a baking sheet with parchment paper or aluminium foil.
- Place kale leaves on the baking sheet in a single layer with the curly side down.
- Bake for 10 minutes, rotating once half way.
- Remove kale chips from the oven and place on paper towel to cool.

- 750g potatoes
- Vegetable oil (around 2tbsp for baking or 500ml if you're frying)

- If baking your fries, pre-heat your oven to 200°C/400°F/Gas Mark 6.
- Wash and slice your potatoes. You can peel your potatoes if you want or leave the skin on for a more rustic feel.
- Par-boil your potatoes in salted boiling water for around 5-10 mins until just soft.
- If baking, toss the chips in vegetable oil, making sure they're all covered and bake in the oven for 15-20 mins until golden brown and crispy.
- If frying, fill a saucepan 3/4 full with vegetable oil and heat until bubbling. To test if the oil is hot enough, drop a small cube of bread into it - if it crisps up, it's ready. Fry the chips in batches until golden and crispy and remove from the oil with a slotted spoon and place on some kitchen roll to absorb the leftover oil.
- Sprinkle the chips with salt or herbs (we love rosemary) and serve. Please note, the nutritional info is based on the baking method. If you opt to fry using the 500ml vegetable option the calories for this dish will significantly increase.
