Ingredients:
  • 1 cup store-bought mayonnaise*
  • 1 to 2 tablespoons Sriracha
  • 1 tablespoon fresh lime juice
  • 1 garlic clove, finely grated
  • Kosher salt
How to cook:
  1. Add mayo, sriracha, lime juice and garlic to a medium bowl, whisking to combine. Season to taste with salt and more sriracha if needed.
  2. If you're sensitive to spice, start by just adding 1 tablespoon of sriracha to the sauce, and increase to taste. I like a good amount of spice, so I used the full 2 tablespoons of sriracha in the aioli shown above. Store aioli in fridge for up to 2 weeks.

  • 1 large egg yolk
  • 2 tablespoons sriracha
  • 1 clove garlic (grated)
  • 1/4 cup extra virgin olive oil (use a great quality oil)
  • 1/4 cup avocado oil (or use any neutral oil, like grapeseed oil)
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dry mustard
  • Salt and pepper to taste (a pinch each is good)
  • 1 tablespoon lemon juice

How to cook:
  1. WHISKING METHOD
  2. In a small bowl, whisk together the egg yolk, sriracha and grated garlic.
  3. Slowly drizzle in the olive oil and avocado oil a tablespoon at a time while whisking vigorously. It helps to keep the bowl set firmly in place (SEE RECIPE NOTES). You may need to add the oil a bit at a time, then whisk.
  4. Whisk until the the aioli is thick and creamy (emulsified). This will take several minutes.
  5. Stir in the cayenne, dry mustard, salt and pepper to taste and lemon juice.
  6. Serve.
  7. BLENDER METHOD
  8. To a food processor or blender, add the egg yolk, sriracha and grated garlic. Process until smooth, about 15 seconds.
  9. Slowly drizzle in the olive oil and avocado oil in a thin stream a tablespoon at a time while processing. You may need to add the oil a bit at a time, then process.
  10. Process until the the aioli is thick and creamy (emulsified). This should take about 2 minutes, though may take longer. Take your time.
  11. Stir in the cayenne, dry mustard, salt and pepper to taste and lemon juice. Process to incorporate.
  12. Serve.
