- 1 cup water
- 1 cup white vinegar
- 2 tbsp sugar
- 1 tbsp salt
- 5-8 each shallots (thinly sliced)
- 2 each garlic cloves (whole)
- 1/4 each yellow onion (thinly sliced)
- 1/4 tsp black peppercorn

- Wash the shallots. Thinly slice them.
- Add the garlic, yellow onion, and peppercorn.
- Put into a pint mason jar.

- I medium red onion, sliced
- 1/2 cup water
- 1/4 cup white wine vinegar
- 1/4 cup apple cider vinegar
- 1 Tbsp. honey
- 1 1/2 tsp. sea salt
- 5 whole peppercorns
- 3 sprigs thyme
How to cook:
- In a 1 pint mason jar add in the red onions and thyme tightly. Place the jar in the sink so that if you spill the brine later it is okay.
- Combine the water, vinegars, honey, salt and peppercorns in a small saucepan. Bring the mixture up to a simmer and stir to dissolve the salt. Carefully pour the mixture into the jar. I had the perfect amount.
- Press the onions down with a fork genty to release any air bubbles. You may need to run it around the sides too. Let them cool for 20-30 min. Serve immediately if needed or they keep well refrigerated for 2-3 weeks covered.

Ingredients:
- 1/2 medium white or yellow onion
- 75 g water
- 35 g apple cider vinegar
- 35 g white vinegar
- 16 g honey (or 18g sugar)
- 2 cloves crushed garlic
- 1/8 tsp turmeric
- 1/4 tsp red pepper flakes
- 1/8 tsp cracked black pepper
How to cook:
- Smash 2 cloves of garlic and slice onion into thin strips. Tightly pack them into mason jar, dispersing the garlic clove between the onions.
- In a sauce pan, combine all the ingredients for the brine and bring to a boil. Pour the hot brine into the mason jar with the onions. Make sure the brine cover the top of the onions. Using a spoon, press the onion down into the liquid. Cover and let cool to room temperature.
- Once cooled, transfer the onion to the fridge to chill overnight. It is ready to use the next day and will keep for a few weeks. Enjoy!

- 1 large red onion, sliced (⅛ -½ inch thick)
- ½ cup EACH: water AND apple cider vinegar
- 1 ½ tablespoon sugar (or more if you prefer sweeter)
- 1 ¼ teaspoon kosher salt
- ¼ cup distilled white vinegar
- 1 teaspoon peppercorns (optional)
How to cook:
- ONIONS: Add the thinly sliced red onions to a large jar that has a tight-fitting lid, set aside for later
- LIQUID: In a saucepan, heat the water until boiling over medium heat. Then add the sugar, salt, and both kinds of vinegar and bring the pickling liquid to a gentle simmer.
- PICKLED ONIONS: When simmering, add the peppercorns, remove from heat and allow the liquid to cool for 2 minutes. Place the jar of onions in the sink or on a plate and pour the pickling liquid over the onions in the jar. Using a spoon or fork, press the onions down so that they are completely submerged in the pickling liquid. Cover and allow the onions to sit at room temperature for at least 30 minutes or up to 1 hour. You can also make these ahead of time, let pickle at room temperature, and then pop them into the refrigerator to use later. Pickled onions hold up for 1-2 weeks when refrigerated.
