- Canned evaporated milk (enough to substitute the amount of cream you are replacing)
How to cook:
- Pour the evaporated milk into ice cube trays.
- Place in the freezer for half an hour. The cubes are ready when ice has formed around the edges of the milk.
- Chill the bowl and mixer beaters in the fridge while the cubes are in the freezer.
- Remove the chilled bowl and mixer beaters.
- Take the ice tray out of the freezer and pour the slightly frozen evaporated milk into a pre-chilled bowl.
- Whisk the ice cubes with the chilled beater until a thick texture forms that resembles cream.
- Use in place of cream for dessert, cake filling etc. Use a spatula to remove from the bowl.

- 1/2-3/4 cup confectioner's sugar
- 1 teaspoon vanilla

- Place the can of evaporated milk in the freezer for 30 minutes (use a timer so you don't forget!). While that is getting cold, place your mixing bowl and beaters (or whisk attachment) in the refrigerator or freezer as well.

I had tried to figure out a way to make Whipped Evaporated Milk myself; but it never worked. NOW I have the answer! What an AHA! moment! This could solve some problems when whipping cream is just not a reality!!! I tend to keep unflavored gelatin on hand; so voila!

How to cook:
- Sweeten evaporated milk with powdered sugar and a touch of vanilla before whipping it into a foamy topping for cocoa, pie or fresh fruit. A bit of gelatin will give it staying power for a beautiful presentation.

- ANOTHER NOTE: I haven't tried this one yet, and I certainly haven't tried it with the recipe I posted for Homemade Evaporated Milk. However, I will do so soon and post my findings. - 490 g/470ml (2 cups) milk
- 105 g (1/2 cup) granulated sugar

- Place milk and sugar in a medium pan and stir over med-low heat with a spoon/spatula until the sugar dissolves.
- As the sugar dissolves, without stirring, let the mixture simmer over medium-low heat. You’ll notice skin and foam on top during the simmering process. After 35 minutes, take them with a spoon/spatula.
- When the mixture thickens, the color becomes darker and the mixture reduces more than half, remove the pan from the heat. The whole process takes almost 42-45 minutes.* Sieve the condensed milk to make it smooth. Pour into a jar and let it cool at room temperature. Once it cools, close the lid and keep it in the fridge. It will thicken in the fridge after a couple of hours.**
