  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 4 boneless pork chops, each about 1" thick
  • 1 TBSP olive oil
  • 3/4 cup water
  • 18-oz bottle of your favorite BBQ sauce, divided

How to cook:
  1. In a small bowl, combine garlic powder, paprika, onion powder, black pepper, and salt.
  2. Place pork chops on a plate and sprinkle seasoning generously over both sides of each chop, rubbing the seasonings into the pork.
  3. Add olive oil to the insert pot of the Instant Pot. Use the Saute function to heat the oil.
  4. Once oil is hot, add pork chops to the pot, cooking for about 2-3 minutes on each side until golden-brown. If four pork chops won't fit in your pot at a time, work in batches.
  5. Remove seared pork chops to plate and press Cancel to turn off the Saute function. Add water to the pot and use a spatula or wooden spoon to scrape up any browned bits from the bottom of the pot (this is important for preventing a BURN error).
  6. Stir in 1 cup BBQ sauce, whisking to combine with the water.
  7. Return pork chops to the BBQ mixture in the pot. Close lid and set the vent to the sealed position. Select a cook time of 15 minutes at high pressure.
  8. When the cook time is complete, allow a natural pressure release. If you are in a hurry, you can opt for a 10 minute natural release, followed by a quick release of remaining pressure.
  9. After the pressure has released and the valve has dropped, carefully remove the lid. Remove pork chops to a plate and let rest for a few minutes. Brush or pour additional barbecue sauce onto the pork chops before serving.

  • 4-6 Boneless Pork Chops
  • 1 Generous Rub BBQ Spice Rub
  • 2 TBSP BBQ Sauce
  • 1 1/2 Cup Chicken Stock
How to cook:
  1. Sprinkle pork chops liberally with dry rub on both sides; pat in both sides with fingers.
  2. Turn sauté option on and drizzle olive oil on the bottom of pot. Lightly sauté chop on each side. Sear pork chops until golden on both sides.
  3. Once all pork chops have been browned remove from pot. Use a wooden spoon to scrape the bits off the bottom of the pan.
  4. Add in chicken broth to pot.
  5. Add pork chops back into pot on top of the instant pot trivet, with chicken broth.
  6. Add 2 Tbsp. or so of BBQ sauce into the pot.
  7. Place lid on and set the Instant Pot to manual 10 minutes. Allow pressure cooker to count down and finish cooking, then turn it off.
  8. Allow pressure to naturally release. After ten minutes, you may release any remaining pressure and remove lid.

How to cook:
  1. Tenderize Pork Chops: Use back-end of a heavy knife or meat tenderizer to pound both sides of pork chops (make criss-cross patterns as shown in photo). Pat dry pork chops with paper towels. Season one side of pork chops with salt & black pepper just before you place them in Instant Pot.
  2. Brown Pork Chops in Instant Pot: Press "Saute" button to heat up your Instant Pot using "Sauté Normal" function. Wait until it says "HOT" (~8 mins). *Pro Tip: Ensure Instant Pot is as hot as it can be in order to induce a Maillard reaction. Add 2 tbsp unsalted butter (28g) in Instant Pot. Ensure the whole bottom is coated with butter. Place 2 pork chops in Instant Pot with seasoned side facing down. Brown for roughly 2 minutes per side. Lightly season the other side with salt & black pepper. Set aside the browned pork chops, then repeat browning step for the other 2 pork chops.
  3. Optional Flavor-Enhancing Step - Saute Mushrooms: Add in sliced mushrooms, saute until all mushrooms’ moisture have evaporated (~8 mins). *Pro Tip: The mushrooms’ edges should be slightly crisped & browned.
  4. Saute Garlic and Onion: Add in one more tablespoon of unsalted butter if necessary. Add in sliced onions, minced garlic, ½ tsp (0.7g) dried thyme, and ½ tsp (0.9g) dried rosemary. If you’ve skipped the optional mushroom step, add the mushrooms here. Saute for another 2 minutes.
  5. Deglaze: Pour in ¾ cup (188ml) unsalted chicken stock, then deglaze by scrubbing all the flavorful brown bits off the bottom with a wooden spoon. Give it a quick mix.
  6. Pressure Cook Pork Chops: Add in 1 tbsp (15ml) regular soy sauce. Give it a quick mix. *Note: We're adding the second tablespoon of soy sauce after pressure cooking. Place the 4 browned pork chops and meat juice back in Instant Pot. *Pro Tip: Make sure the pork chops are partially soaked in the cooking liquid. Close lid, then turn Venting Knob to Sealing position. Pressure Cook at High Pressure for 0 (zero) minute + 8 minutes Natural Release. *Pro Tip: Yes, you can set the Instant Pot to "0 (zero)" minute with the + and - buttons. It will start natural releasing as soon as it reaches high pressure. Carefully open the lid.
  7. Make Mushroom Sauce: While the Instant Pot is natural releasing, mix exactly 2 tbsp (20g) all-purpose flour with ½ cup (125ml) heavy cream. Set aside pork chops. Bring the content to a simmering with "Saute" function. Mix heavy cream mixture into the mushroom sauce in Instant Pot one third at a time until desired thickness.
  8. Season & Serve: Taste and season the mushroom sauce with 1 tbsp (15ml) regular soy sauce. *Note: Use less or more soy sauce accordingly. Place pork chops in Instant Pot. Then you're ready to serve these deliciously juicy tender Pork Chops. Enjoy~
