Ingredients:
  • 1.8 kg beef soup bones and short ribs (Be sure there are some marrow bones in the package)
  • 1 shallot (cut in quarters)
  • 1 head garlic minced (cut in half)
  • 2 stalks stalks (cut in half)
  • 1 bunch Italian parsley
  • 2 bay leaves
  • 1 tbsp apple cider vinegar
  • 1 tsp black pepper
  • 1 twig fresh thyme (1 tsp dried)
  • 1/2 tsp ground coriander/cilantro
  • 3 litres water

How to cook:
  1. Fill the Instant Pot insert about 3/4 of the way with water. Press the saute button and bring the water to a boil.
  2. Once the water is boiling, add the bones. Allow the bones to boil for 20 minutes. This will release the impurities from the bone. Then drain the liquid and rinse off the bones and Instant Pot insert.
  3. Arrange the bone, shallot, and head of garlic on a sheet pan. Roast the bones at 450 degrees F for 20-30 minutes on each side.
  4. When the bones have finished roasting, add them to the Instant Pot with the garlic and shallot. Be sure to include any drippings from the pan.
  5. Add the remaining ingredients to the Instant Pot and cover it with the 3 litres / 12 cups of water.
  6. Close the lid and turn the pressure valve to sealing. Using the "Meat/Stew" button cook the broth for 2 hours. Let the pressure release naturally. It will take about an hour to come to pressure and another hour to release.
  7. Strain the broth into a large clean container. Add a cup of ice to rapidly cool the broth. When the broth is cool pour some broth into an air tight container to store in the refrigerator. Freeze the remaining broth in premeasured portions using a large ice cube tray. The broth in the refrigerator will last 5-7 days. The broth in the feezer will last 3-6 months.

  • 2-3 lbs Beef Bones* (Use a variety of bones if you're able to: knuckle, tail, marrow, etc. )
  • 1 Onion (Peeled and quartered)
  • 8 cloves garlic (peeled and crushed)
  • 2 Carrots (Top and ends Trimmed )
  • 4 Stalks Celery
  • Thumb Ginger
  • 1 Jalepeno or Anaheim Pepper
  • 1 t peppercorns
  • 2-3 tbsp Apple Cider Vinegar*
  • 2 T Celtic Salt
  • 4-5 Qt Water ((less if using 6qt Instant Pot))

How to cook:
  1. In an 8qt Instant Pot add all of the ingredients. If using a 6qt Instant Pot, use less water (3-4 qts).
  2. Cook Manual - high - for 240 minutes.

  • 6 or more chicken bones
  • 1 carrot (coarsely chopped)
  • 1 celery stalk (chopped)
  • 2 onions (quartered)
  • salt and pepper (to taste)
  • 2 bay leaves
  • 8 cups water

How to cook:
  1. Chop up the carrot, celery, and onions and place them in the Instant Pot.
  2. If desired, you can sauté the veggies for a few minutes with a bit of oil using the Sauté setting on your Instant Pot. This will result in a more flavourful broth, but it will be darker in colour.
  3. If you want your broth to be seasoned, apply the seasoning first to the chicken bones.
  4. Add the bones and bay leaves to your Instant Pot and then fill about 3/4 of the way full with water.
  5. Secure the lid.
  6. Select the Soup/Stew setting and increase the time to 45 minutes.
  7. Do a natural release.
  8. Carefully pour the broth through a strainer to remove the vegetables and bones.

  • 2 to 3 pounds of leftover bones
  • 2 medium carrots (you can omit if you are strict keto)
  • 1 medium onion (cut in half)
  • a bunch of fresh parsley (about 12 stems)
  • 4 to 5 celery stalks
  • 1/4 cup Apple Cider Vinegar (with the Mother)
  • 1 tsp black pepper
  • pinch of cayenne red pepper (probably 1/8 teaspoon or so)
  • pinch of sage
  • pinch of thyme
  • 2 teaspoons Redmond's Real Salt or Pink Salt
  • *Optional: 1 stick Kerrygold Butter

  4. Set the Instant Pot to the soup setting for 120 minutes.
  5. When it's done, allow it to vent naturally.
  6. Once it's cooled enough to handle, strain out all the really soft bones and vegetables through a strainer and store the liquid contents into Mason Jars.
  7. If you've added the butter to the recipe it will create a nice fat layer on top of each Mason jar that helps preserve the broth. Once the fat cap is broken, the broth needs to be used within 3 to 4 days.
