  • 1 Tablespoon Vegetable Oil, (or oil of your choice)
  • 1 Medium White Onion, (thinly sliced)
  • 16 Ounces Beer, (or lager/ale of your choice)
  • 28 Ounces Sauerkraut, (drained)
  • 5 Large Bratwurst, (1-1.5 lbs pack)
  • 5 Large Hot Dog Buns

How to cook:
  1. Turn on Instant Pot using saute function and allow liner to get hot. Add the oil and onions, and saute until onions soften. Turn off the Instant Pot.
  2. Add the sauerkraut, beer, and bratwurst. Close the lid and set the valve to sealing. Use the manual (pressure cook) button to adjust the time to 15 minutes. After the time is up, allow a 10 minute natural pressure release before opening the valve to release any remaining pressure.
  3. Carefully remove the lid. The brats may have sunk into the sauerkraut, so use tongs to transfer them to buns. Load the buns with the brats, sauerkraut, and your favorite condiments. Store leftovers in your fridge, in a sealed container, for up to 3-days.

  • 1 onion (sliced)
  • 2 tablespoon garlic (minced)
  • 12 ounces beef (pilsner, pale)
  • 2 pound bag sauerkraut (drained of juice)
  • 1 bay leaf

How to cook:
  1. Preheat the Instant Dutch oven to sear/saute. Once heated add a small amount of oil to the pot. Add the brats in batches, and sear both sides. Remove to plate as they are done.
  2. Add the sliced onions to the pot, and cook until softened. Add the minced garlic and saute for 30 seconds or until fragrant. The saute/sear function is very efficient, and if the pot seems to hot it can be cancelled for this step. The cast iron will retain enough heat to cook the onions and garlic.
  3. Cancel the sear/saute. Deglaze the pan with some of the beer. Add the drained sauerkraut and remaining beer to the Dutch oven.
  4. Add in the remaining ingredients, and then stir to combine. Place the brats back in the sauerkraut mixture.
  5. Cook on the Braise function for one hour. Stir halfway through the cooking time.
  6. Serve immediately with mashed or boiled potatoes. These are also delicious on a roll with mustard and fries as a side.
  7. Store leftovers in the refrigerator for up to one week. Reheat in microwave or Dutch oven on saute or warm. Leftovers can be frozen for up to three months.

  2. Brown the bratwurst lightly in the butter on both sides, about 2-3 minutes each. You might need to brown these in two batches, depending on how many brats you're cooking and the size of your pressure cooker.

  5. Carefully pour the beer over the bratwurst.
