Ingredients:
- 2 Tbsp butter
- 1/2 cup chopped onion
- 1 cup brown rice (see note)
- 1 1/4 cup chicken broth
- 1/2 tsp salt
- 1/2 tsp ground turmeric (optional)
- 1/2 tsp garlic powder
- 1 (12 oz) package pre-cooked chicken sausage links (see note)
- 2 cups frozen peas and carrots (optional)

- Turn your Instant Pot to the saute mode. Chop up your onion. When the display on the pot says HOT add in the butter and swirl it around until it is melted. Add in the onion and saute for about 3 minutes. Add in the brown rice and stir to coat the rice with the butter. Stir for about 1 minute.
- Add in the broth, salt, turmeric and garlic powder. Stir. Lay the sausage links on top of the rice. Turn off the saute setting.
- Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook time to 22 minutes on high pressure. Once the time is up let the pot sit there for 5-10 minutes (display will read L0:05) and then move the valve to venting.
- Open up the pot and carefully remove the sausage and place on a cutting board. Stir in the frozen peas and carrots. Put the lid back on and let the heat in the pot cook the vegetables for 5 minutes . Slice the sausage into quarter inch pieces and then stir them back into the rice.
- Scoop onto plates and serve. I served mine with roasted broccoli.

Ingredients:
- 1 tablespoon oil
- 1 yellow onion (chopped)
- 3 garlic cloves (minced)
- 1 cup carrots (peeled, cut into ½ inch chunks)
- 3-4 boneless skinless chicken thighs (cut into 1 inch chunks)

- Start by rinsing your white rice under cool water in a fine mesh colander for about a minute. Set it aside.
- Set the Instant Pot to sauté mode. Add the oil and sauté the onions, carrots, and garlic, 5 minutes. Stirring occasionally
- Turn off sauté mode.
- Add the chicken pieces, cut sausage, Cajun seasoning, smoked paprika, turmeric, onion powder, garlic powder, black pepper, red pepper flakes, and chicken base. Stir well to coat.
- Add the rice and VERY lightly stir it into the pot. You don't want to stir all the rice to the bottom.
- Pour in the chicken broth. Make sure all the rice is submerged.
- Very lightly pour the can of diced tomatoes over top. Do not stir.
- Put the lid on and close the pressure valve to seal. Set the Instant Pot to the pressure setting on high for 8 minutes.
- At the end, when the timer beeps, do a 5 minute natural release. Finish with a quick release by turning the pressure valve to "vent".
- Once all the pressure is released take the lid off and add the frozen peas and stir to combine. The heat from the pot will cook the peas.
- Serve immediately.
- Store leftovers in an airtight container in the fridge for up to 4 days.

- 1 package al fresco Chicken Sausage, diced
- 1 lb. ground turkey
- 1 Roma tomato, diced
- 1/2 yellow onion, diced
- 2 cloves of garlic, diced
- 1 teaspoon olive oil
- 1 (12 oz) Package Spaghetti
- 1 (24 oz.) Bottle of Spaghetti Sauce
- Salt and Pepper to Taste
- 1/2 teaspoon Italian Seasoning
- 1/2 teaspoon Basil
- 2 2/3 Cups Warm Water
- Optional: fresh thyme and parmesan cheese
How to cook:
- Start by setting your Instant Pot to “Sauté”. Once heated, drizzle your olive oil in and add in your ground turkey meat and brown for 2-3 minutes.
- Add in your sausage, onion, garlic, Italian seasoning and basil. Continue to brown for several minutes until the meat is cooked throughly. Turn off your Instant Pot and allow to cool.
- Next, take your spaghetti noodles and break them in half and layer your noodles into a criss-cross pattern, in fourths. Stacking them carefully on top of the cooked meats and seasoning.
- Add your water, spaghetti sauce, additional seasoning (as desired) and half of the diced tomatoes. Close the lid on your Instant Pot and set to “Pressure Cook” and on high for 7 minutes.
- Once done, use the Quick Release method to remove lid. Allow the spaghetti to sit cool for a few minutes before serving.
- Dish up your spaghetti and garnish with fresh thyme and parmesan cheese, if desired. You can also serve with a delicious side salad and garlic bread or rolls.

- Heat the oil in the pressure cooker.
- Prick the skin of the sausages in several places with the tines of a fork.
- Add the sausages and chicken to the oil and cook until well browned on all sides.
- While the chicken is cooking, dice the onion.
- Cut the green peppers into 3/4" thick strips.
- Mince the garlic.
- When the chicken and sausages are browned, remove them from the pan and set aside.
- Add the onion, green peppers and garlic to the cooker to cook, stirring often, until they begin to soften, about 4 minutes.
- Add the vinegar and stir up the browned bits from the bottom of the cooker.
- Add the chicken and sausages, tomatoes, basil, fennel, red pepper flakes, salt and pepper to taste.
- Close pressure cooker and bring up to full pressure.
- Reduce heat to stabilize pressure and cook for 10 minutes.
- Release pressure and adjust the seasoning.
