Ingredients:
  • 2 boneless skinless chicken breasts ((chopped into 1" pieces) about 1 lb)
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 1 teaspoon minced garlic
  • ¾ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • 3 cups low sodium chicken broth
  • 1 cup diced tomatoes with Italian seasoning ((not drained))
  • ⅓ cup roasted red peppers ((from the jar, chopped))
  • 3 cups lumaconi pasta ((or other short cut pasta) 240 grams)
  • ⅓ cup heavy cream
  • 2 tablespoons corn starch
  • 1 cup chopped spinach
  • 1 tablespoon basil pesto
  • ¼ cup shredded Parmesan cheese

How to cook:
  1. Turn the Instant Pot to saute and wait until it reads 'hot'. Add the oil and then the chicken. Cook and stir for 2-3 minutes until no longer pink on the outside.
  2. Add the salt, garlic, Italian seasoning and pepper. Cook and stir 1 minute.
  3. Add the chicken broth, and scrape the bottom well to remove any bits that may have stuck.
  4. Turn the Instant Pot off.
  5. Stir in the tomatoes and red peppers. Top with pasta, and gently press the pasta into the liquid but don't stir (it's best if it's not touching the bottom of the pot).
  6. Put the lid on, turn the valve to sealing, and select Pressure Cook or Manual for 2 minutes. It will take about 10 minutes to come to pressure and begin counting down.
  7. When the cook time is over, turn the Instant Pot off and let sit for 2-3 minutes.
  8. Gradually release the pressure by holding the valve open slightly, so that it releases gradually and not all at once.
  9. Stir together the cream and corn starch and stir into the pasta with the spinach, pesto and Parmesan. Turn the Instant Pot to saute. Cook and stir for 2 minutes or until sauce is thickened.

  • 1 cup water
  • 1 lb rotini pasta (uncooked)
  • 2 cans cream of chicken soup
  • 2 pkg Italian Dressing Mix
  • 1 lb chicken tenders (thawed, approx 6-7 tenders)
  • 2 cups frozen peas and carrots
  • 1 8 oz block cream cheese

How to cook:
  1. Add the chicken broth, water and pasta to the Instant Pot's liner.
  2. Pour the cream of chicken soup on top of the pasta.
  3. Sprinkle the dressing mix packets into the Instant Pot.
  4. Place the chicken tenders on top.
  5. Secure the lid and cook on Manual (or pressure cook) HIGH for 3 minutes. Allow for a 6 minute NPR before releasing the pressure manually.
  6. Remove the cooked chicken and set aside.
  7. Stir in the frozen peas and carrots.
  8. Cut the cream cheese block into chunks and set onto of the pasta in the Instant Pot. Return the lid and let the Instant Pot sit on warm for 5 minutes.
  9. Shred the chicken while the Instant Pot is sitting on warm.
  10. Stir the cream cheese into the pasta until completely combined.
  11. Stir in the shredded chicken. Serve hot!

  • 1 Tbsp olive oil
  • ½ cup diced onions
  • 1 Tbsp minced garlic
  • 1 ¾ cups chicken broth
  • 8 oz uncooked rigatoni, penne, cavatappi, macaroni or rotini pasta
  • 1 ½ pounds uncooked chicken tenderloins or chicken breasts cut into the size of tenderloins
  • Salt and pepper
  • 1 tsp Italian seasoning
  • 1 (24 oz) jar or can of tomato-based pasta sauce
  • 1 (8 oz) brick of cream cheese
  • 3 cups chopped spinach
  • 2-3 Tbsp cornstarch + 3 Tbsp water
  • 6 Tbsp Parmesan cheese

How to cook:
  1. Turn your Instant Pot to the saute setting. When the display says HOT add in the oil and onion. Saute for 3-4 minutes. Then add in the garlic and saute for 20 seconds. Pour in the broth and scrape the bottom of the pot. Turn off the pot.
  2. Add in the pasta in a single layer covering with broth as much as possible. Lay the chicken on top of the pasta in an even layer. Sprinkle salt, pepper and Italian seasoning on top of the chicken. Dump the pasta sauce over the chicken. Add the cream cheese brick on top of the pasta sauce.
  3. Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes for rigatoni or rotini or 4 minutes for penne, cavatappi or macaroni. When the time is up let the pot sit for 5 minutes and then move the valve to venting. Remove the lid.
  4. Stir the contents of the pot and stir in the spinach. Thicken with cornstarch if desired. Turn your Instant Pot to the saute setting. In a small bowl stir together 2-3 Tbsp of cornstarch with 3 Tbsp of water, until smooth.Then pour the mixture into the Instant Pot. The cornstarch mixture will thicken up contents of pot quickly. Turn off the pot.
  5. Scoop onto serving dishes and enjoy with a sprinkle 1 Tbsp parmesan cheese on each bowl.
