  • 1/4 cup Dark Soy sauce
  • 1.5 tbsp Tomato Ketchup
  • 1/2 tbsp Black Peppercorns
  • 1.5 tsp brown sugar
  • 1/2 tsp Cayenne Pepper Powder (**optional, skip if you are intolerant to heat)
  • 2 Bay leaf
  • 5 garlic (**roughly chopped)
  • 1/4 cup cider vinegar
  • 4 garlic (**whole garlic cloves)
  • 3 tbsp Avocado oil (**or any neutral oil)
  • 1/2 cup water

How to cook:
  1. How to marinate the Pork
  2. Add the pork chunks in a clean dry bowl along with everything mentioned in the "For marinating the pork" section above in the ingredients list.
  3. Mix well so that the pork pieces are well coated with the marinade. Break the Bay leaves into pieces and mix well with the marinated pork. Refer the Recipe Video.
  4. You can leave the marinated pork overnight in the fridge for best flavors or marinate it for a minimum of 1 hour.
  5. How to cook the Pork Adobo in the Instant Pot?
  6. Set the Instant Pot on SAUTE function and set it on HIGH.
  7. Add oil. When the oil becomes moderately hot gently add the marinated pork leaving behind any excess marinade. We'll be adding that later. Sear the pork pieces very well until they are nicely browned around the edges. Scrape the sides and the bottom of the steel pot continuously while you sear the meat. Don't worry about the browned bottom of the pot. This will enhance the taste of the dish. Moreover, we'll be de-glazing the pot later.
  8. Once, the pork is well seared add 1/2 cup water, the cider vinegar any excess marinade. De-glaze the pot very well with the help of your spatula. There should not be any bits and crumbs stuck at the bottom of the steel pot. This is very important to avoid the BURN sign in your Instant Pot.
  9. Throw in the whole garlic cloves, smash them slightly with the back of your knife before adding them to the pot. Also add the rest of the bay leaves. Give everything a good mix.
  10. CANCEL the SAUTE function. Close the lid of the Instant Pot and SEAL the valve. PRESSURE COOK on HIGH for 10 minutes.
  11. Once, the pressure cooking cycle is over the Instant Pot will begin to beep. Wait for a Natural Pressure Release (NPR) for 10 minutes and than release the rest of the pressure manually by moving the valve from the SEALING to the VENTING position. Carefully open the lid of the pot.
  12. Serve the Instant Pot Pork Adobo hot and enjoy!

How to cook:
  1. Add oil to the Instant Pot and press the Saute button to heat the oil.
  2. Press the saute mode button and saute the green onion and cloves of garlic, just a few minutes until lightly browned.
  3. Add soy sauce, vinegar, brown sugar, pepper and bay leaf. Mix well.
  4. Add the pork. Mix well to coat the pork.
  5. Secure the lid. Cook on high pressure for 30 minutes.
  6. Let the pressure release naturally when the cooking time is complete (this will take about 15 minutes)
  7. Remove the pieces of pork with tongs or a slotted spoon and set aside. Skim the fat off the surface of the sauce (see notes below)
  8. Serve the adobo pork either in whole chunks or shredded. The sauce can be served over the pork or on the side.
  9. Serve adobo pork over rice or other types of grains (like barley) to soak up the sauce.
  10. Optional - Thicken the Sauce
  11. Press the Saute button to bring the sauce to a simmer.
  12. In a small bowl, whisk together 2 tablespoons cornstarch with 2 tablespoons of cool water until smooth.
  13. Slowly pour the cornstarch and water slurry into the sauce, whisking constantly. Simmer about 1 minute more, while whisking frequently until the sauce has thickened.

  • 4-5 cloves garlic (smashed)

How to cook:
  1. Option to trim pork of excess fat. Then season all sides of pork with 1 tsp salt and ½ tsp pepper.
  2. Turn on Sauté (More) on your Instant Pot and add oil. When it reads "Hot", add half the pork and sear for 2-3 minutes each side until browned. Transfer to a plate, set aside, and repeat with the remaining half of the pork.
  3. Turn off the Instant Pot. Add garlic cloves and stir constantly, toasting for 30 seconds or until fragrant. Add a splash of the water and use your wooden spoon to scrape browned bits off the bottom of the pot.
  4. Add soy sauce, vinegar, water, sugar, bay leaves, and peppercorns to the pot. Nestle in pork shoulder. Place the lid on and seal. Cook on Manual Pressure: High for 30 minutes, then let release naturally for 10 minutes before doing a quick release.
  5. Transfer the pork to a cutting board or plate. Option to shred pork or leave whole.
  6. Turn Sauté (Normal) mode on and let sauce boil for 6-8 minutes or until reduced to half. Season to taste. Strain sauce or use a slotted spoon to remove peppercorns and bay leaves.
  7. Serve pork on top of starch or vegetables. Spoon sauce over the top and garnish with green onion.

  • ½ cup vinegar
  • 2-3 tablespoons soy sauce
  • 2 pieces bay leaves
  • ½ teaspoon garlic powder (optional)
  • Salt or fish sauce (if needed)

How to cook:
  1. Add pork, water, vinegar, onion, garlic, garlic powder (optional), ground black pepper or peppercorn, & bay leaves in the inner pot. Note: Save some fresh garlic for sautéing later.
  2. Install the condensation collector behind the cooker and plug the instant pot.
  3. Press “SAUTE” and adjust time to 30 minutes. Note: Thirty minutes is just a time I chose to assign. When I’m done sautéing, I can cancel the SAUTE program at any time . You can assign any time you want.
  4. After a few minutes, display will show “HOT”.
  5. Do not stir or cover with lid. Due to vinegar, don't stir until the mixture boils for at least 5 minutes.
  6. Stir after 5 minutes before switching to “PRESSURE COOK" program.
  7. Press “CANCEL” to cancel Saute program.
  8. Place and close lid and turn the steam release handle to "SEALING".
  9. Press "PRESSURE COOK".
  10. Adjust time to 12 minutes. Leave it alone until done. Note: Cooking time will vary depending on the cut & amount of meat. Experiment is key! I tend to set it for less time since I can always do it again. Again if you think you have set the time longer than it should be – you may cancel the program at any time.
  11. Float valve will pop-up & the countdown begins.
  12. When cooking time is done, "PRESSURE COOK" will no longer be lit & display will show the elasped time. Example: L000
  13. Press "CANCEL".
  14. If you watch the video, I showed what happens when you manually do a quick pressure release. I usually cover it with a towel. It releases steam and you’ll have liquid splattered all around. Be very careful when doing this. It is hot. If you are in a rush, you can do it this way but I usually wait when the float valve has drop down naturally.
  15. Open lid.
  16. Separate meat with the sauce and place in their own bowl.
  17. Press "SAUTE" program.
  18. When "HOT", add oil.
  19. Saute garlic.
  20. Pour soy sauce.
  21. Add & brown the meat until crisp or however you prefer it.
  22. Remove meat when brown and crisp.
  23. Leave the crusty garlic & meat sticking to the pan. That is very tasty & will add flavor to your adobo!
  24. Add sauce & cook until reduced.
  25. Season with salt or fish sauce, if needed.
  26. Cancel "Saute" program.
  27. Pour sauce in the adobo meat.
  28. Serve hot with lots of rice. Enjoy!
