Ingredients:
  • 4 pound boneless pork butt (cut into 2" chunks)
  • 1 yellow onion (sliced)
  • 2 cups chicken stock
  • juice from 1 orange
  • juice from 2 or 3 limes
  • 1 tablespoon dried oregano
  • 1 tablespoon kosher salt
  • 2 bay leaves (optional)

How to cook:
  1. In your instant pot, add cubed pork butt + raw onion. Pour over the chicken stock, orange juice, lime juice, oregano, salt, pepper + bay leaves. Stir to combine. Close with the lid, and make sure the vent is at SEALING.
  2. Close with the lid, and make sure the vent is at SEALING. Cook on HIGH PRESSURE for 30 minutes. Will take about 10-15 minutes to reach pressure, then it will start counting down from 30. After the 30 minutes is up, do a QUICK RELEASE, where you move the valve to VENTING to release all the steam. Once all the steam is gone and the float valve has dropped, you can safely open the instant pot.
  3. Set your oven to BROIL.
  4. Gently remove all the carnitas and cooked onions, transferring them to a rimmed baking sheet. Discard the bay leaves. Shred the carnitas using 2 forks. Pour 1 a cup of the cooking liquid from the instant pot over the carnitas.
  5. BROIL the carnitas for 5 minutes, until crispy. If I have time, I like to turn the carnitas 3 or 4 times and keep broiling in 5 minute increments. This really caramelizes the fat and gives it the most amazing texture and flavor.
  6. Serve warm topped with chopped cilantro. Delicious in burrito/taco bowls with fajita veggies, cauliflower rice, guacamole + salsa. Can also serve as tacos or as a salad.

  • 4 pound pork butt roast or pork shoulder roast, cut into into 4-inch chunks, trimmed of excess fat (if you can only find bone-in then get one around 6 – 6.5 pounds.) This recipe works with more meat as well just don't fill the pot above 2/3rds line.
  • 1 tablespoon salt
  • 2 teaspoons pepper
  • 2 teaspoons chipotle chili pepper, or regular chili powder if you don’t want a kick
  • 2 teaspoons oregano
  • 2 bay leaves
  • 2 teaspoons ground cumin
  • 2 tablespoons olive oil
  • 5 cloves garlic, smashed and rough chopped (or use 1 tsp of garlic powder)
  • 1 large onion, rough chopped
  • 2 cups chicken stock

How to cook:
  1. Cut the pork shoulder into 4-inch pieces and remove as much fat as you can while doing it.
  2. Mix all the spices together in a small bowl and rub spices all over the meat.
  3. Turn the Instant Pot to saute mode and let it get hot, add the olive oil and sear the meat for 2 minutes on the two main sides. Depending on how large your pork shoulder is, you may need to do this in two or three batches. Once all the meat is seared, transfer the meat to a plate or bowl.
  4. Add the onions and garlic to the pot and saute for 3 minutes. Add a splash of chicken broth so the brown bits from the meat that are on the bottom of the pot don’t burn.
  5. Add the rest of the stock and all the meat (and bone if you have one) then pressure cook the carnitas meat for 20 minutes on high. Allow the pressure to release naturally for 15 minutes, then manually release any remaining pressure. (Note that the Instant Pot will take between 15-18 minutes to come to pressure depending on how much meat you’re cooking.)
  6. Next, gently remove the meat from the liquid and place it on a plate to shred. It is so tender it will fall apart effortlessly.
  7. Strain the fat, onions, and garlic out of the liquid, pour a bit over the pulled pork, and toss. (If you want a thicker sauce, after it's strained, put it back in the Instant Pot and saute it for 5-10 minutes. You can even add a cornstarch/water slurry to thicken it up even quicker.) If you don't use all the cooking liquid be sure to save the rest to use to reheat the meat or in case you want to use it for soup later.
  8. If desired, broil the meat for 2-3 minutes on a baking sheet until the edges are crispy.
  9. Finally, squeeze fresh lime juice onto the meat and serve!

  • 2 tbsp Erythritol
  • 1 tsp Dried Oregano
  • 1 tsp Salt
  • 1 tsp Pepper

  • 1 small Onion (diced)
  • 2 large Jalapeno (sliced)
  • 4 cloves Garlic (crushed)

How to cook:
  1. Remove any string or netting from the pork. Unroll it and cut deep slits in the meat to ensure even marinating and cooking.
  2. Rub the pork with the oregano, erythritol, salt, pepper, and olive oil and marinate for at least 3 hours, or overnight for best results.
  3. Set your instant pot to saute, add the butter, onion, jalapenos and garlic. Saute until the onion starts to turn translucent.
  4. Add the lime juice, zest, and chicken stock, followed by the marinated pork. Keeping the skin and fat to the top.
  5. Place the lid on your instant pot and set to high pressure for 2 hours.
  6. After 2 hours have passed, use the natural release technique before removing the lid.
  7. Gently remove the pork, it will be very soft and tear apart easily. We recommend using a set of tongs in each hand or a sturdy spider tool to remove it.
  8. Put the pork into a baking tray and shred the meat with the tongs or a pair of forks.
  9. Turn the heat back to high and reduce the cooking juices to about 2 cups. Pour the reduced juices over the shredded pork.
  10. To serve the carnitas, heat 1 tbsp olive oil in a non-stick pan over medium to high heat. Add the pork to the pan and press down gently.
  11. Cook until the pork is as crispy as you desire.

How to cook:
  1. Place pork, seasonings, garlic, jalapeno, and onion in the pressure cooker.
  2. In a bowl, stir together broth, sauce, monkfruit, and lime juice until mixed well. Pour over pork.
  3. Pressure cook the meat 15 minutes per pound (1 hour and 15 minutes for a 5 pound butt), then allow the pressure to release naturally for 10 minutes.
  4. Discard the vegetables, shred the meat, and reserve at least 1 cup of the juice.
  5. Place shredded meat in a single layer on baking sheet or in a casserole dish.
  6. Broil meat on high 2-3 minutes or until crisp. Watch VERY closely--All ovens heat differently, so take it out when it looks nice and crispy!
  7. Take meat out of oven and spoon some of the juice over the top of the meat. This helps make the meat super flavorful and moist, so don't skip!
  8. Serve carnitas with warm low-carb tortillas (I used Mission Carb Balance Street Tortillas), lime wedges, and keto slaw.
  9. In a medium sized bowl, add all ingredients and toss until well coated. Add salt and pepper to your preference. Store in the fridge until ready to serve.
