Ingredients:
  • 2 pounds red potatoes (cut into 2-inch chunks)
  • 12 ounces smoked sausage (cut in 1-inch slices)
  • 2 ears corn (cut in thirds)
  • 2 tablespoons minced garlic
  • 3 bay leaves
  • 1 pound raw, frozen jumbo shrimp
  • 8-12 ounces light beer or stock (see note)
  • 2 tablespoons fresh lemon juice (divided)
  • 2 tablespoons Old Bay Seasoning
  • 3 tablespoons butter (melted)
  • 1 tablespoon parsley (minced)

How to cook:
  1. Layer
  2. In the inner pot of the Instant Pot, layer potatoes, sausage, and corn in that order. Add garlic and bay leaves. Place the shrimp on top of the corn and then pour the beer or stock into the inner pot. Be sure to use 1 cup of beer/stock for a 6-Quart Instant Pot and 1.5 cups of beer/stock for an 8-Quart Instant Pot.
  3. Season
  4. Pour 1 1/2 tablespoons of the lemon juice over the shrimp and then sprinkle with Old Bay.
  5. Pressure Cook
  6. Place the lid on the Instant Pot and be sure the vent knob is sealed. Set to cook on high pressure for 2 minutes.
  7. Pressure Release
  8. Once cook time has elapsed, do a quick release of pressure.
  9. Mix
  10. Combine the melted butter, parsley, and remaining 1/2 tablespoon of lemon juice together in a small bowl. Pour over the shrimp mixture and toss to coat, removing the bay leaves as you come across them.
  11. Serve immediately

A mix of smoky sausage, briny shrimp, tender potatoes, and sweet corn go into this casual southern dinner known as a low-country boil. Using a multicooker optimizes this classic recipe for those extra-warm days when you want things cooked as fast as possible. Better yet, the colorful mix of ingredients can be served up on one big platter, making it a great dish to serve at a cookout or beachside gathering.

Ingredients:
  • 1 yellow onion, quartered
  • 1 head garlic, halved crosswise
  • 2 ribs celery, cut crosswise into thirds
  • 3 dried bay leaves
  • 2 tablespoons old bay seasoning
  • 2 teaspoons black peppercorns
  • 2 teaspoons Kosher salt
  • 1 pound small red potatoes (about 12)
  • 12 ounces andouille sausage, cut into 2 inch pieces
  • 3 ears corn, husked and cut into thirds
  • 2 1/2 pounds shell on large shrimp (16- to 20-count bag)
  • 1 small lemon, sliced into rounds
  • 4 tablespoons unsalted butter
  • Cocktail sauce and lemon wedges, for serving
How to cook:
  1. Place onion, garlic, celery, bay leaves, old bay, peppercorns, salt, and 8 cups water into bowl of a large multi cooker. Place on high "Saute" setting and bring to a boil. Stir in potatoes and sausage. Secure lid and cook on high "Pressure Cook" setting for 4 minutes.
  2. Once time is complete, immediately release pressure and carefully remove lid. Using a large slotted spoon, transfer sausage and vegetables to a large tray lined with butcher paper. Cover to keep warm. Stir corn, shrimp, and lemon slices into liquid. Cover and let stand until corn is tender and shrimp is pink and cooked through, 3 to 4 minutes.
  3. Transfer shrimp, corn, and lemon slices to tray. Reserve 2 cups cooking liquid and discard the rest. In a small pot, melt butter over medium-high heat, then add reserved cooking liquid. Bring to a boil and cook until reduced slightly, about 4 minutes. Pour some of the buttery broth over the food and serve remaining on the side, along with cocktail sauce and fresh lemon wedges.

How to cook:
  1. Place the potatoes, andouille sausage, onion, garlic, 1 tbsp Old Bay, and 4 tbsp butter in the liner of the Instant Pot. Put the corn on the cob on top and pour chicken broth over everything.
  2. Turn the Instant Pot to HIGH and cook for 5 minutes. When the time is up, perform a Quick Release.
  3. Add the shrimp into the pot, replace the lid, and cook on HIGH for another minute. When the time is up, perform another Quick Release.

  • 1 pound large EZ-Peel shrimp
  • 3/4 pound snow crab clusters
  • 3/4 pound cooked lobster claws
  • 6 fresh littleneck clams

How to cook:
  1. Saute the sausage:
  2. Place the clams in cold salted water to cover and change water a few times to get rid of silt and sand.
  3. As you handle them they should close. Discard any that are wide open and stay that way or any with a foul odor.
  4. Place the sausage, onion and oil in the instant pot and saute until brown.
  5. Remove the sausage and set aside. Don't worry about the chopped onion.
  6. Add the beer, water, Cajun spice, lemon pepper, garlic, Worcestershire sauce and Louisiana pepper sauce.
  7. Stir to lift the fond off the bottom of the cooker.
  8. Add the steamer rack to the cooker.
  9. Pressure Cook Part One:
  10. Place the sausage chunks on the rack and top with the potatoes and corn.
  11. Place the lid on the cooker and set the vent to seal. Cook at pressure on Manual/High setting for 4 minutes, then use the quick release.
  12. When the steam subsides, open the cooker.
  13. Pressure Cook Part Two:
  14. Top the contents with the lobster claws and crab.
  15. Place the lid on the cooker and set the vent to seal. Cook at pressure on Manual/High setting for 2 minutes, then use the quick release.
  16. Steam Cook Shellfish:
  17. When the steam subsides, open the cooker and top the contents with the shrimp and clams.
  18. Replace the lid leaving the vent open for steam.
  19. Cook on the steam setting for five minutes.
  20. Prepare the Bam Sauce/Garlic Butter:
  21. While the shellfish steam, heat the Bam sauce (garlic butter ) in a small skillet.
  22. After five minutes, open the cooker and check to see that shrimp are opaque and the clams have opened. Discard any clams that do not open.
  23. Carefully remove contents to a large bowl or platter.
  24. Add half cup of the cooking liquid in the bottom of the cooker to your Bam Sauce/Garlic Butter and stir.
  25. Pour this over your seafood boil. Garnish with parsley and serve with lemon wedges.
