- 900g Boneless Chicken Thighs (skin removed)
- 400 grams Full Fat Greek Yogurt
- 2 Tablespoons Olive Oil
- 1 Clove of Garlic Minced/ Grated
- 1 Tablespoon Dried Thyme
- 1/2 Tablespoon fine Himalayan Salt
- 1/2 Tablespoon Ground Black Pepper
- 1/2 Tablespoon Ground Coriander
- 1/2 Tablespoon Ground Cumin
- 1/2 Tablespoon Paprika
- 1/4 Tablespoon Ground Red Chilli Flakes
- Zest of 1 lemon
How to cook:
- Slice the chicken and thin as possible (without cutting your fingers!)
- To make the marinade, mix the yogurt, olive oil, lemon zest, minced garlic, salt, pepper, and spices in a large bowl.
- Add the chicken to the marinade, cover in clingfilm and leave in the fridge ideally for 24 hours
- When ready to cook, slice an onion in half, flat side down and put a metal or bamboo skewer through it. Layer your chicken over the spike.
- Bake in the oven at 180C for 40 minutes.
- Remove from the oven, wrap in foil and leave to rest for 10 mins.
- Remove to a chopping board and thinly slice. If there were any juices left, pour over your sliced chicken to add flavor.
- Serve with Greek salad and keto flatbread.

- 4 Keto Pita/Naans
- 1 lb flank steak
- 1/4 cup avocado oil
- 2 cloves garlic, minced
- juice of 1 lemon
- 1 tsp pink himalayan salt
- 1/2 tsp black pepper
- 1 small roma tomato, diced
- 4 oz feta cheese, crumbled
- 1 cup lettuce, chopped
- 1/4 cup store bought tzatziki sauce

- Combine the steak and marinade ingredients in a large zip top gallon bag and shake until steak is fully coated in marinade.
- Refrigerate for 1-4 hours. The longer it marinades the more flavorful the meat will be.
- Make the naan according to the blog post while the steak marinades and then allow to cool on a cooling rack so they don't become soggy.
- Once the steak is marinated, heat a large skillet to medium high heat.
- Add the steak to the skillet and sear on both sides for 2-3 minutes until fully cooked through.
- If you are using a large cut of meat (ours was already 1/2 inch) you can finish off the steak in the oven at 400°F for 5-7 minutes.
- Once cooked through, allow the steak to cool on a cutting board for 10 minutes prior to slicing.
- Once sliced top each piece of naan with a quarter of the meat along with some of each topping.
- Serve immediately.

- 1 ounce pork rinds
- 1 tablespoon oregano
- 2 teaspoons onion powder
- 2 teaspoons salt
- 1 teaspoon pepper
- 4 cloves (3/8 ounce) garlic
- 1 pound ground beef
- 1 pound ground lamb
- 1 cup full-fat plain Greek yogurt
- 1 teaspoon garlic powder
- 1 tablespoon white vinegar
- 2 tablespoons olive oil
- 2.5 ounces (¼ whole) cucumber, seeded and grated
- 2 tablespoons minced fresh dill
- salt and pepper to taste
How to cook:
- 1. Pulse the pork rinds in a food processor until they are fully crushed. Add the oregano, onion powder, salt, pepper, garlic, and then pulse again so that all the spices are mixed into the crumbs.
- 2. Add the ground beef and lamb to the food processor and process into a paste. If your processor is not large enough then you may need to take some of the meat out and do it in batches. If you have to batch it, then knead everything together in a large bowl when you are done.
- 3. Wrap the meat up tightly and allow to chill in the refrigerator for 1 hour.
- 4. Meanwhile, mix all of the ingredients for the Tzatziki sauce together and also store in the fridge. Be sure to squeeze all of the water out of the cucumber after you grate it.
- 5. Preheat your oven to 350°F. Unwrap the gyro loaf and place it on a pan to bake. Flatten it out a bit so that it's not more than 3 inches thick. I like using a casserole dish just in case some of the juices come out.
- 6. Bake for 40 -60 minutes, until it's browned and internal temperature has reached 165°F.
- 7. Allow to rest for ten minutes and set your oven to broil. Then thinly slice all of the meat on a bias. Broil for 5-10 minutes or until the edges start to crisp up.
- 8. Weigh all of the gyro meat and then divide by 8 in order to know how many ounces of cooked meat to serve on each flatbread. There are 8 servings, and thus 8 gyros total.
- 9. Serve the meat on the coconut flatbreads with the tzatziki sauce, and any additional toppings that you would like. You will get 1.5-2 tablespoons of sauce per serving, so I like to spread it on the inside of the breads before loading the meat in.

- 1 Kg Boneless & Skinless Chicken Thighs
- 400 grams Full Fat Greek Yogurt
- 2 Tbsp olive oil
- the juice of half a lemon
- the zest of 1 lemon
- 10 grams Minced Garlic
- 1/2 Tbsp Salt
- 1/2 Tbsp Pepper
- 1/2 Tbsp Paprika
- 1/2 Tbsp Cumin
- 1/2 Tbsp Coriander Powder
- 1/4 Tbsp Red Chilli Flakes
- 1 Tbsp Fresh or Dried Thyme (You can also use oregano)
How to cook:
- Mix the yogurt with the olive oil, lemon zest, lemon juice, minced garlic, salt, pepper and spices in a big bowl. Set the marinade aside and move on to the chicken
- Place some cling film over the chicken thigh and beat it with the flat end of the meat mallet to even it out. This will help it cook more evenly. Do this to all the thighs.
- Then marinate the thighs in the marinade for about 24 hours. You can marinate it for a shorter duration as well. It's completely up to you.
- Then cut a thick piece of onion and push a skewer through it to create a vertical spit. Then pierce and layer the chicken one above the other in opposite directions (watch the video) and then bake in a pre-heated oven at 200C for 1.5-2 hours.
- Once done just slice that chicken and eat with some tzatziki or in a Keto naan or even in a salad bowl.
