Ingredients:
- 2 turkey breast steaks (roughly 125g each)
- 40g reduced fat cheddar, grated
- 80g Primula light cheese spead
- 80g Primula light cheese spead
- ½ red pepper, finely chopped
- 1 leek, finely sliced
- 200g mushrooms, sliced
- 1 garlic clove, finely diced
- 2 tbsp tomato puree
- ½ tsp dried mixed herbs
- 1 tbsp balsamic vinegar
- Salt & pepper
How to cook:
- Spray a saucepan with a little cooking spray, add the leeks, peppers, and garlic and cook over a low heat for a couple of minutes.
- Add the mushrooms, balsamic, herbs, puree and tomatoes and bring to a boil, reduce the heat and simmer for 10-15 minutes or until the veggies are tender and the sauce has reduced a little.
- Preheat the oven to 180'c, season the turkey steaks and brown off in a hot griddle/frying pan for about ½ a minute on each side.
- Transfer to an oven proof dish, spoon over the sauce and top with the cheese, place in the oven for 15 minutes until the top is golden brown.

Ingredients:
- 4 turkey breast fillets
- 3 tbsp tomato puree
- Juice of 1 small to medium lemon
- 2 fat garlic cloves, minced
- 1 tbsp dried basil
- Cooking spray such as frylight
- 2 tbsp balsamic vinegar
- Salt to taste
- Ground black pepper to taste
- 800 g (approx) canned baby new potatoes, drained
- 4 tbsp fat free vinaigrette
How to cook:
- Preheat grill or air fryer.
- Boil new potatoes in salted water for 8-10 minutes then drain and return the potatoes to the pan. Add the vinaigrette and season with salt and pepper then lightly crush with fork or masher.
- Meanwhile mix the tomato puree, lemon juice, garlic, balsamic vinegar and basil. Season with salt and pepper and mix to coat with the marinade.
- For the grill arrange the turkey in an oven proof tray in a single layer then spray on each side with cooking spray. Grill for 5-6 minutes o each side. For the air fryer grill on each side for 5 minutes at 200c. Times will vary slightly depending on the thickness of the meat.
- Serve with the crushed potatoes and boiled vegetables of choice.

Ingredients:
- 170g/6oz dried pasta shapes, such as fusilli
- Salt and freshly ground black pepper, to taste
- 227g/8oz broccoli florets
- 2 sticks celery, thinly sliced
- 340g/12oz cooked skinless turkey breast, cut into bite-sized pieces
- 511ml/18fl oz passata with herbs
- 2 garlic cloves, peeled and crushed
- 28g/1oz fresh wholemeal breadcrumbs
- 1-2tsp dried Herbes de Provence, or dried mixed herbs
- 4 individual gratin dishes, or a single shallow 1.75 litre/3 pint flame-proof serving dish
How to cook:
- Bring a large saucepan of water to the boil over a high heat, add the pasta and a pinch of salt and cook according to the packet instructions. Drain well and set aside.
- Meanwhile bring another medium saucepan of water to the boil, add the broccoli, celery and a pinch of salt and boil for 5 mins, or until the broccoli is just beginning to soften. Drain well, rinse under cold running water, drain again and set aside.
- Preheat the grill to medium-high.
- Place the turkey in a clean saucepan on a medium hea tand stir in the passata along with the garlic, broccoli, celery and pasta, then simmer for 5 mins. Season to taste.
- Pour the turkey mixture into 4 individual gratin dishes, or a single shallow 1.75 litre/3 pint flame-proof serving dish. Scatter the breadcrumbs and herbs evenly over the top, then grill until the sauce is bubbling and the crumbs are crisp and golden. Serve hot.
