Nothing says comfort quite like a slice of a chewy, fudgy chocolate brownie, and this triple chocolate recipe from Jane's Patisserie is sure to hit the spot. Serve warm with ice cream for the ultimate indulgence.

Ingredients:
  • 200g unsalted butter
  • 200g dark chocolate
  • 4 eggs
  • 275g caster sugar
  • 100g plain flour
  • 50g cocoa powder
  • 100g white chocolate chips
  • 100g milk chocolate chips
  • 100g dark chocolate chips
How to cook:
  1. Preheat the oven to 180°C/160°C fan and line a 23cm square baking tin with parchment paper.
  2. Melt together the butter and dark chocolate in a heatproof bowl set over a pan of simmering water, or in the microwave for 1–2 minutes. Set aside to cool to room temperature.
  3. Using an electric whisk or stand mixer, whisk together the eggs and caster sugar for a few minutes until the colour has turned pale, is very mousse-like, and has doubled in volume. You will know when it’s ready because when you lift the whisk out of the mix it should leave a trail for a couple of seconds before disappearing.
  4. Pour the cooled chocolate and butter over the egg and sugar mixture and fold together carefully. It might take some time but be patient – you do not want to knock out the air you whisked in at the previous step. Once completely combined, sift the plain flour and cocoa powder on top of the chocolate mix and then gently fold together again. Fold through the chocolate chips and pour into the lined tin.
  5. Bake for 25–30 minutes. Once baked, leave to cool fully in the tin. You can also ‘set’ the brownies in the fridge for 2 hours to create a lovely fudgy texture once they have cooled from the oven.
  6. Customise: The brownies can be flavoured with vanilla extract, peppermint extract, or the zest of a large orange. You can also fold through pieces of your favourite chocolate bars – soft centred bars should be frozen before baking into brownies, but solid chocolate bars can be baked straight away! You can also add any of the following to your brownies: 200g dried fruit or nuts, 150g frozen or fresh berries, 75g desiccated coconut.

  • 200 g dark chocolate
  • 200 g unsalted butter
  • 4 medium eggs
  • 275 g light brown soft sugar
  • 100 g plain flour
  • 50 g cocoa powder
  • 200 g milk chocolate chips

  • 125 g milk chocolate
  • Sprinkles
  • Flakes

How to cook:
  1. Bronuts
  2. Preheat the oven to 180ºc/160fan and grease 2-3 doughnut moulds (the recipe makes 15-18 bronuts) - place the prepped moulds on baking trays.
  3. Add the dark chocolate and unsalted butter to a bowl, and melt together until smooth - I do this in the microwave.
  4. Once melted, leave this to cool for 10 minutes.
  5. In a new bowl, add the eggs and light brown soft sugar and whisk together for a few minutes - the mixture should double in volume, be lighter in colour and mousse like.
  6. Once whipped, pour in the cooled chocolate mixture and carefully fold together.
  7. Add in the plain flour and cocoa powder and fold together again.
  8. Finally, add in the chocolate chips and fold through.
  9. Add the brownie mixture to a large piping bag, and pipe into the prepared doughnut moulds.
  10. Bake the bronuts in the oven for 16-18 minutes - once baked, leave to cool fully, in the moulds.
  11. Decoration
  12. Once the bronuts have cooled, melt the two chocolates in separate bowls (that are big enough to dunk the bronuts into).
  13. Dunk half of the bronuts into the white chocolate, and half into the milk chocolate, placing each onto a lined tray.
  14. With the leftover chocolate, drizzle on any decoration like I have.
  15. Add a flake, sprinkles or whatever you fancy to each bronut and let the chocolate set. Enjoy!

  • 200 g Dark Chocolate
  • 200 g Unsalted Butter
  • 3 Large Eggs ((or 4 medium))
  • 275 g Light Brown Sugar
  • 100 g Plain Flour
  • 50 g Cocoa Powder
  • 250 g Rolos ((frozen for at least an hour))
  • 100 g Chocolate Chips/Chunks
  • 100 g Caramel ((I use carnations))

How to cook:
  1. Make sure the Rolos are frozen for at least an hour before baking.
  2. Preheat your oven to 180C/160C Fan and line a 9x9" baking tin with parchment paper!
  3. Melt together the dark chocolate and unsalted butter until smooth in the microwave or in a bowl over a pan of simmering water. Leave to cool for a few minutes
  4. Using an electric whisk/stand mixer, whisk the eggs and sugar together for a few minutes until the mixture has doubled in volume, is alot paler, and leaves a trail for a few seconds when you lift the whisk out.
  5. Pour the chocolate/butter mix into the whisked sugar and eggs and fold through very carefully.
  6. Add in the flour and cocoa powder and fold through carefully again.
  7. Add in the frozen Rolos and chocolate chips and fold in (You can reserve a small handful to sprinkle on the top if you want). Pour the mixture into the tin!
  8. Drizzle the caramel over the top of the brownies and very gently swirl in.
  9. Bake in the oven for 25-30+ minutes or until there is a very slight wobble in the middle. Sometimes it can take longer, see notes below.
  10. Leave to cool in the tin!
  11. Optional - set the brownies in the fridge for 1-2 hours after they have cooled to create a lovely fudgey texture!

  • 100 g light brown sugar
  • 75 g white granulated sugar
  • 1 medium egg
  • 1 tsp vanilla ((optional!))
  • 250 g plain flour
  • 35 g cocoa powder
  • 1 + 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp sea salt
  • 100 g white chocolate chips ((or chopped chocolate))
  • 100 g milk chocolate chips ((or chopped chocolate))
  • 100 g dark chocolate chips ((or chopped chocolate))

How to cook:
  1. Add your butter and sugars to a bowl and beat until creamy - I use my stand mixer with the beater attachment!
  2. Add in your egg, and beat again. If using the vanilla, add it in now!
  3. Add in the plain flour, cocoa powder, baking powder, bicarbonate of soda, and salt and beat until a cookie dough is formed!
  4. Add in your chocolate chips and beat till they're distributed well!
  5. Weigh your cookies out into eight cookie dough balls - they're about 115-120g each!
  6. Once they're rolled into balls, put your cookie dough in the freezer for at least 30 minutes, or in the fridge for an hour or so!
  7. Whilst the cookie dough is chilling, preheat your oven to 180C Fan, or 200C regular! If your oven runs hot, go for 160C-170c.
  8. Take your cookies out of the freezer/fridge and put onto a lined baking tray. I put four cookies per tray!
  9. Bake the cookies in the oven for 12-14 minutes. I don't personally flatten the cookies, as they flatten enough during baking - however, if you like flat cookies, flatten them a bit before baking.
  10. Once baked, leave them to cool on the tray for at least 30 minutes, as they will continue to bake whilst cooling!
