  • Bread Recipe
  • 200g bread flour + 2-3 tbsp of flour (to help with stickiness of the dough)
  • 20g sugar
  • 3g salt
  • 3g dry active yeast
  • 30g condensed milk
  • 130g warm milk (110F)
  • 20g unsalted butter (softened)
  • Condensed Milk Filling
  • 20g sweetened condensed milk
  • 20g unsalted butter (softened)
How to cook:
  1. 1. Combine warm milk, a bit of the sugar, and yeast in a mixing bowl and allow the yeast to activate (approx 5 mins). Once foamy, add in the rest of the bread ingredients in a stand mixer with dough hook and start kneading on low speed.
  2. 2. Knead until the dough is smooth and the dough holds together when you try to shape it into a ball (approximately 5 minutes in a stand mixer on low speed). Add the extra flour a bit at a time if you notice too much dough sticking to the bottom of the mixer as it's kneading. There should be a bit of dough sticking to the bottom of the bowl but not too much.
  3. 3. Coat the dough ball in some vegetable oil to prevent the dough ball from drying out. Then, cover the bowl with some saran wrap and place it in a warm place to allow it to rise (~ 30-40 mins).
  4. 4. Meanwhile, preheat the oven to 300F and prepare the condensed milk filling by mixing the butter and condensed milk until it turns into a relatively smooth paste.
  5. 5. Once the dough is done rising, roll it out into a rectangle (approximately 10" x 13") and evenly spread the filling all over the dough.
  6. 6. Cut the sheet of dough into 4 even pieces. Then, stack them on top of each other. Divide into 8 even pieces.
  7. 7. Arrange each piece in a loaf pan as shown in the image above. Cover with saran wrap and allow to rise for another 30-40 minutes or until double in size.
  8. 8. Bake for around 35 minutes or until it turns light golden brown.
  9. 9. When done, lightly dust with icing sugar.

  • 1 cup whole milk (slightly warm (80º - 90ºF))
  • 1 tablespoon instant yeast
  • ½ cup sweetened condensed milk
  • 1 large egg (lightly beaten)
  • 3 ¼ cups bread flour (sifted or whisked to aerate)
  • ½ teaspoon fine sea salt
  • ¼ cup unsalted butter (room temperature, cubed)

How to cook:
  1. To the bowl of a stand mixer, add the warm milk. Sprinkle the yeast on top and stir to combine. Add condensed milk and egg then flour and salt.
  2. Using the dough hook, mix on low speed until the ingredients start to come together. Increase speed to medium-low. Add the butter, a little at a time. Continue kneading the dough until the butter pieces are no longer visible. The dough will be slightly sticky and will likely stick to the bottom or the bowl, but should not stick to the sides. If it’s sticking to the sides, continue kneading for a bit longer. You can add more flour, up to ¼ cup, 1 tablespoons at a time, but do so sparingly and only if needed
  3. With lightly oiled hands so the dough doesn’t stick, shape the dough into a ball. Doesn’t have to be perfect. Place the dough in a bowl that’s been lightly greased with vegetable oil, seam side down. Cover with plastic wrap and allow to rise in a warm spot (~75-80ºF) for 1 ½ to 2 hours, or until the dough has doubled in size
  4. Meanwhile, line a loaf pan with parchment paper, allowing some overhang, and set aside. If making rolls, line a 9x13-inch baking pan with parchment paper. After the dough has risen, gently punch it down and turn it out onto a clean, lightly floured work surface. Divide the dough into 3 large pieces, roughly the same size. If making rolls, divide the dough into 12 equally sized pieces, about 3 ounces each. Shape each piece into a tight ball
  5. Place the pieces of dough, seam side down, next to each other in the pan. They will be touching. For rolls, place in 4 rows of 3 rolls. Cover with plastic wrap and allow to rise until the top of dough is level with the rim of the pan, about 30-40 minutes
  6. Preheat the oven to 350ºF (180ºC). Whisk together the egg and milk to make the egg wash. Gently brush the tops of the dough with egg wash
  7. Bake in the preheated oven 22-25 minutes or until the tops of the rolls are a deep golden brown. For rolls, bake 18-20 minutes.
  8. Remove from the oven and cool in the pan for 5 minutes. Turn out the loaf onto a wire rack and allow to cool completely before serving

How to cook:
  1. Soften the butter at room temperature.
  2. Add milk, condensed milk, egg, salt, and yeast in a large mixing bowl, whisk well. Sift all-purpose flour into the same bowl, and combine well with a spatula. Keep mixing and folding the dough until the ingredients are incorporated. Add the softened butter to the dough, and mix it thoroughly until combined.
  3. Transfer the dough to a floured surface, and knead it for 15 to 20 minutes with your hands. Keep kneading the dough until smooth. (Keep one tablespoon of the all-purpose flour on the side and sprinkle it over the dough if the dough gets too sticky to knead.)
  4. Place the dough in a buttered bowl, and cover it with a cloth or plastic wrap. Let the dough proof in a warm area for 1 hour or until doubled in size. (I usually leave the dough in the microwave with a cup of hot water next to it, which helps to reduce the proofing time.)
  5. After first proofing, transfer the dough to a floured surface and gently press to release the air from it. Divide the dough into two equal portions. Flatten and shape each of them into a 16 x 8-inch rectangle, then roll it up and pinch the seam to seal. Place the seam against the table, and cut the dough into equal pieces with a knife, like making cinnamon rolls.
  6. Line the cut dough up in a loaf pan and cover it lightly with plastic wrap. Let the dough rise in a warm area for 45 minutes. Repeat this step with the second loaf.
  7. Once the loaves have doubled in size, brush with egg wash.
  8. Preheat the oven to 180 °C (356 °F), and bake for 22 minutes until golden brown.
  9. Prepare the glaze by combining condensed milk with softened butter in a small bowl. Whisk well, and set aside.
  10. After baking, remove the bread from the baking loaf pan immediately. Brush the bread with the condensed milk glaze, and serve warm or at room temperature.
