Here's how to make Italian Nacho similar to Johnny Carino's, but with your own twist.

Ingredients:
  • 15-25 wonton wrappers
  • 2-3 cups canola or vegetable oil
  • 1-1 1/2 cups mozzarella cheese
  • 1/2 cup parmesan cheese
  • 2-3 tomatoes
  • 1 can black olives
  • 1-2 jalapeños fresh or pickled
  • 2-3 tablespoons capers
  • 3/4 cup precooked chicken or sausage
  • 1/4-1/2 cup alfredo sauce
  • Cilantro or basil optional
How to cook:
  1. Cut the wonton wrappers into smaller chip-sized triangles or strips.
  2. Add an inch of oil in a pot or pan and heat on medium heat. The oil should be hot enough that the wonton wrappers begin to bubble and slightly curl within 2-3 seconds of adding them to the pan.
  3. Add wonton wrappers 2-3 at a time. Fry the wrappers 10-30 seconds each side until they just start to turn brown.
  4. Take the wrappers out with tongs or a metal fork or strainer and place on a plate with a few paper towels on it.
  5. Chop the olives and jalapeños in thin slices or chunks.
  6. Spread the chips in a thin layer on a baking sheet and sprinkle the cheese, olives, jalapeños, chopped chicken or sausage.
  7. Bake the chips at 325°F for 5-10 minutes until the cheese is melted.
  8. Chop the tomatoes and cilantro into small chunks.
  9. Add the tomatoes, cilantro, capers, and any other cold ingredients you'd like on top. Pour Alfredo sauce over top and serve.

Ingredients:
  • 20 Corn Tortillas (*)
  • 4 cups Oil or Lard (for frying)
  • 2 cups Pepper Jack Cheese (Grated)
  • 1 cup Italian Sausage
  • 1 6 oz Chicken Breast
  • 2 tbsp Italian Seasoning
  • 1 cup Tomatoes (about 2-3)
  • 1 6 oz Black Olives, canned
  • 1 medium Jalapeno (**)
  • 1/4 cup Banana Peppers, jarred
  • 2 cups Alfredo Sauce (prepared)

How to cook:
  1. Homemade Tortilla Chips
  2. Heat lard in deep fryer until lard reaches 350 degrees F.-OR-Heat 1-inch of high-head oil in a large frying pan over medium-high heat until oil reaches 350 degrees F.
  3. Stack the tortillas and cut into 6 equal wedges (like a pizza).
  4. Fry a few chips at a time, turning occasionally with a slotted spoon, until crisp and lightly browned, about 1 minute or less. Drain chips on a paper towel-lined plate; sprinkle immediately with salt.
  5. Nacho Toppings
  6. Brown sausage in a medium skillet over medium-high heat. Drain and remove sausage from pan.
  7. Dice chicken into small, bite-sized pieces and cook in the same skillet used to brown the sausage. Season with Italian Seasoning, and cook until chicken is browned and no longer pink.
  8. While meats are cooking, finely dice tomatoes, olives, jalapenos, and banana peppers.
  9. Assembly and Cooking
  10. Preheat oven to 400 degrees F.
  11. Evenly distribute chips in the bottom of a half-sized baking sheet (13 x 18 x 1 inch)
  12. Sprinkle the grated pepper-jack cheese in an even layer on top of the chips. (The cheese will bind the chips and the other toppings together without making the chips soggy).
  13. Distribute the remaining ingredients in the following order on top of the chips: meats, tomato, olives, jalapeno, and banana peppers.
  14. Drizzle Alfredo sauce over the top of the nachos.
  15. Cook nachos in the oven until for about 10 minutes until the pepper-jack cheese is melted and Alfredo sauce is warmed.
  16. Serve immediately and enjoy!

Johnny Carino's Italian Nachos Copycat Recipe
These Italian Nachos are a delicious twist on the same ol' nachos at Johnny Carino's.

Ingredients:
  • 1 Package wontons (found in the produce section, cut on the diagonal to form triangles)
  • 1 package ground pork (cook in a saute pan until browned)
  • 1 6- ounce package grilled chicken pieces (sometimes found in the salad section)
  • 1 jar Pepperochini peppers (I got mild)
  • Shaved Parmesan for garnish
  • Optional: Diced Roma tomatoes (sliced black olives)
  • 4 tablespoons butter
  • 1 teaspoon garlic (minced)
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups half-and-half
  • 2 1/2 cups grated Parmigiano-Reggiano (or other good-quality Parmesan)
How to cook:
  1. In a heavy, medium saucepan melt the butter over low heat. Add the garlic and then the flour and stir to combine. Cook, stirring constantly, for 3 minutes. Increase the heat to medium and whisk in the half-and-half little by little. Cook until thickened, about 4 to 5 minutes, stirring frequently. Remove from the heat; add 2 cups of the grated Parmesan. Season with the salt, pepper and stir until cheese is melted and sauce is smooth. Cover and set aside.
  2. Heat a heavy saucepan or deep fryer to medium. Cook the wontons until light brown. This only takes a few seconds per side. Set aside on paper towels to drain.
  3. Pile the wontons on a large serving platter. Drizzle with warm cheese sauce. Add sausage, chicken and peppers. Top with shaved Parmesan.

Ingredients:
  • 12 wonton wrappers
  • 1 egg white, frothed
  • 2 tablespoons olive oil
  • 1/2 teaspoon oregano or 1/2 teaspoon italian seasoning mix
  • 1/2 lb Italian sausage, cooked and crumbled
  • 1 (10 ounce) container refrigerated four cheese pasta sauce or 1 (10 ounce) container alfredo sauce
  • 1/2 cup chopped tomato
  • 1/4 cup sliced green onion
  • 1 (2 1/4 ounce) can sliced ripe olives
  • 2 tablespoons pickled jalapeno peppers (more to taste) or 2 tablespoons banana peppers, chopped
  • 1 cup shredded mozzarella cheese
  • 1/4 teaspoon red pepper flakes

How to cook:
  1. Cut wontons into 4 triangles each and toss lightly in olive oil.
  2. Cover a cookie sheet with a single layer of wontons. Brush with egg white and sprinkle with oregano or Italian seasoning.

  4. Meanwhile, heat the sauce, brown the Italian sausage and drain fat.
  5. On a platter layer the pasta chips, sausage, and sauce. Top with the tomato, onions, olives and peppers. Finish with shredded cheese and red pepper flakes.
  6. Place in warm oven for 5 minutes to melt cheese and serve.
