- 2 large eggs
- ½ cup all-purpose flour
- 1 teaspoon kosher salt
- 1 cup plain breadcrumbs
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- Olive oil spray

- In a small bowl, whisk the eggs until smooth.
- In another small bowl, add the flour and salt. Mix to combine.
- In a third bowl, add the breadcrumbs, Italian seasoning, and garlic powder. Mix to combine.
- Working a few at a time, dip a cheese curd into the flour, followed by the egg wash and then the breadcrumbs. Then, dip the cheese curd back into the egg wash and back into the breadcrumbs again. Double-dipping will help keep the cheese sealed so it doesn’t explode in the air fryer.
- Place the breaded cheese curd on a parchment-lined baking sheet and repeat with the remaining cheese curds. Once all of the curds have been breaded, freeze them for 1 hour.
- Once the cheese curds have frozen, spray your air fryer basket with olive oil spray and add as many cheese curds as will fit (you don’t want to overcrowd the basket). Spray the top of the curds with olive oil spray and bake at 400F for 6-7 minutes, or until they are golden brown and crisp.
- Serve warm, your favorite dipping sauce on the side.
- Store any leftover cheese curds in an airtight container in the fridge for up to two days.

- 1 package cheese curds ((or cheese sticks))
- 1/2 cup almond flour
- 1/3 cup grated parmesan cheese
- 2 egg whites
- 1 tbsp heavy cream
- 1 tsp garlic powder
- vegetable oil
How to cook:
- Begin by whipping your egg whites, garlic powder, and heavy cream in a bowl.
- In a separate bowl, mix together your almond flour and parmesan.
- Take your cheese curd (or cheese sticks cut into four) and dip them in the egg mixture, coating evenly.
- Dip your curd into the almond flour mixture.
- Repeat steps three and four with that SAME curd. You should be double coating it. Set aside on a plate and do the same for the rest of your cheese.
- Place your plate of cheese curds into the freezer for half an hour. This part is very important! This will help keep them from melting out in the fryer. If you can leave them in for longer, do that!
- With 7 minutes left in the freezer, fill a frying pan with about one inch of oil.
- Heat it up the oil. You need it to be hot because you want the curds to brown quickly!
- Take your curds out and place them into the fryer, one by one. Flip them once the bottom is browned. Leave them in for only 2-3 minutes, or until brown.
- Drain the grease and enjoy! They're delicious with a chipotle aioli! :)

- Prepare a dredging station for the cheese curds. In one bowl, combine all purpose flour and garlic powder. In a second bowl, whisk together the eggs and minced garlic. In the third bowl, combine panko bread crumbs, plain bread crumbs, salt, chili powder, black pepper, and basil. Line a baking sheet with parchment paper to place cheese curds after they are dredged.
- Work in batches of 4-5 cheese curds at a time. First, add to the flour and toss until coated. Then, dip in the eggs and allow excess egg to drip off. Last, roll the cheese curds in the bread crumbs. Repeat until all cheese curds are dredged and breaded. Place into the refrigerator until the air fryer is preheated. **We have found that double breading the cheese curds prevents the cheese from seeping out of the breading as it cooks. Simply repeat dredging in flour, eggs, then bread crumbs a second time. Skip repeating this step if you are able to refrigerate the breaded cheese curds for at least 45 minutes.
- Preheat the air fryer to 350 F, air fryer setting, for 5 minutes.
- Line the air fryer basket with foil and spray lightly with non-stick cooking spray. Remove breaded cheese curds from the fridge and place into the basket in a single layer with a finger space in between. Spray the cheese curds with cooking spray to lightly saturate the breading. Cook for 6 minutes, stopping halfway through the cooking time to flip them over to promote even browning. **Depending on the size of your air fryer, this may take multiple batches. (We use an instant pot vortex and this recipe took 2 batches.) Place remaining curds back into the refrigerator as you cook.
- While the cheese curds cook, prepare chili garlic ranch. In a small mixing bowl, whisk to combine ranch seasoning, sour cream, heavy cream, pepper, and chili garlic hot sauce. Refrigerate until ready to serve.
- Plate cheese curds in a bowl or on a platter and serve with ranch dip. Enjoy!
