  • 1 large egg
  • 1/2 cup grated parmesan cheese
  • 1/4 cup almond flour
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

How to cook:
  1. Slice zucchini into 1/4 to 1/3 of an inch slices.
  2. Beat egg well in a separate bowl.
  3. Combine grated parmesan cheese, almond flour, garlic powder and Italian seasoning in another bowl.
  4. Dip zucchini slice in egg then dip it in the parmesan cheese mixture. Set on parchment lined air fryer tray.
  5. Repeat until air fryer tray is full. Lightly spray coated zucchini with avocado oil spray.
  6. Set air fryer to 370F for 8 minutes.
  7. Remove tray and flip zucchini slices. Spray with avocado oil and cook for another 8 minutes.
  8. Repeat process with second batch of zucchini.
  9. Serve warm.

  • 1 medium zucchini sliced thinly lengthwise
  • 1 cup of crushed pork rinds
  • 1/2 cup of grated parmesan cheese
  • 1 clove of garlic, crushed
  • 1/4 cup of mayonnaise

How to cook:
  1. First slice the zucchini using a mandoline to make long, thin slices. Then dab with a paper towel or tea towel to dry the zucchini so the breading will stick better.
  2. Crush the pork rinds in a food processor and then in a shallow bowl, mix the crushed pork rinds and parmesan cheese.
  3. In a small baggie add the mayonnaise and crushed garlic.
  4. Dip the slice of zucchini in the baggie and smother with mayo mixuter.

  7. Air fry for 10-15 minutes at 350°F. Times may differe depending on the thickness of the zucchini. My zucchini made 11 pieces and it took 13 minutes to bake.

  • 1 pound zucchini ((about two medium zucchini))
  • 1 tbsp flaxmeal
  • 2 tablespoons chickpea flour ((besan))
  • 2 tablespoons almond flour
  • ½ tsp ground cumin
  • ½ tsp cayenne
  • ½ tsp turmeric ((optional))
  • 1 tbsp extra virgin olive oil ((skip if oil-free))

How to cook:
  1. Slice the zucchini a fourth of an inch thick. You can make thinner chips and they will be crispier, but I like slightly thick chips. If you make the chips thinner make sure you reduce cook time accordingly. I would air fry them for under 10 minutes.
  2. Flaxmeal
  3. Place the zucchini chips in a bowl with the flaxmeal. Add ½ teaspoon salt and mix. Let stand a couple of minutes so the zucchini expresses a bit of moisture, then toss with the flaxmeal so it adheres to the zucchini chips. You can also add a tablespoon of water if you find the flax is not adhering.
  4. Mix spices
  5. Add the remaining ingredients to the bowl: chickpea flour, almond flour, ground cumin, cayenne, turmeric, salt to taste and extra virgin olive oil, if using. Mix well until all chips are coated with the spices.
  6. Preheat air fryer
  7. Preheat the air fryer to 400 degrees Fahrenheit/205 degrees Celsius. Arrange the zucchini fries in a single layer in the air fryer basket.
  8. Air fry the zucchini for 7 minutes, then flip the chips over and air fry for another 6 minutes, for a total of 13 minutes. The zucchini fries should be golden-brown with a nice crust.
  9. Serve
  10. Remove to a plate. Serve immediately. The zucchini fries are best eaten right after they are made, when they will be at their crunchiest. They will get softer as they stand but they will still taste amazing. You can always reheat the chips in the air fryer for a couple of minutes to make them crispy again.

  • 1/2 cup almond flour
  • 1/4 cup ground pork rinds, plain
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon garlic sea salt
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1/2 teaspoon oregano
  • 2 eggs, beaten
  • 1/2 cup mayonnaise
  • 2 teaspoons prepared horseradish
  • 2 tablespoons ketchup (no sugar added)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic salt

How to cook:
  1. If you are baking them in the air fryer oven, If you are baking them in a conventional oven, preheat to 400F.
  2. Set up your breading station. Mix all the almond flour, cheese, pork rinds, oregano, parsley, garlic salt and basil together in a bowl. Beat eggs together in a separate bowl.
  3. Dip the zucchini into the egg, then into the breading mixture (lightly, do not press into the mixture). Shake off any excess breading and place on a baking rack (or a parchment or Silpat lined baking pan) sprayed with olive oil spray.
  4. Once all the zucchini have been breaded and are on the baking racks, spray the tops with olive oil spray and bake at 400F for 15-20 minutes or until golden brown. Rotate/swap the pans half way through cooking.
  5. While the zucchini fries are baking, prepare the dipping sauce. Mix all the sauce ingredients in a bowl and whisk together until combined and set aside.
  6. Allow the zucchini fries to cool slightly before serving and enjoy!
