- 1 cup pickle juice (optional, to marinate chicken bits before frying)
- 1/2 cup olive oil
- 1.5 lb chicken breast, cut into 1/2 in squares
- 2 eggs, whisked
- 1 cup finely ground almond flour
- 1 tbsp paprika
- 1 tbsp ground pepper
- .5 tsp salt

- Heat oil on med-high heat in medium pan.
- Slice chicken into 1/2 inch cubes. Pat dry with paper towel.
- submerge chicken into whisked eggs
- One at a time, transfer chicken pieces to bowl containing dry ingredients and place in frying pan.
- Flip nuggets after about 4-5 minutes on each side. Fry until golden brown. Remove and place on a plate with a paper towel.

- 1/2 tsp garlic powder

- 1/2 cup coconut or avocado oil (for frying)

- 1 tsp Dijon mustard

- Cut chicken into 1-inch chunks. Add chicken to a bowl with the 1 cup pickle juice and let marinate for at least 30 minutes.
- Beat eggs, coconut milk and tbsp of pickle juice in a shallow bowl, set aside.
- Mix almond flour and seasonings in a medium bowl
- Dip the chicken chunks into the egg mixture and transfer to the almond flour mixture, making sure to coat well. Place the coated chicken on a separate plate.
- Repeat this process until all chicken chunks are coated.
- Heat coconut oil in a frying pan over medium-high heat and cook 3 minutes per side. (Be careful not to crowd in the skillet. Cook in 2 batches if needed)
- For the sauce, add everything to a bowl and mix together until combined.
- Place the nuggets on toothpicks with pickle slices and serve with the Special Sauce.

Ingredients:
- 2 eggs
- ¼ cup Heavy Cream
- 1-2 cups dill pickle juice (for marinade)
- 3 – 4 Lbs Chicken Tenders
- 3 cups pork rind crumbs (you can make your own)
- 2 tablespoons coconut flour (I only use this kind)
- 3 tablespoons powdered sweetener (I used golden Lakanto Monkfruit)
- 1 – 2 teaspoon sweet paprika
- 1/2 teaspoon garlic powder
- 1 teaspoon fresh black pepper
- 1 teaspoon pink Himalayan salt
How to cook:
- Up to 4 hours before you are ready to cook your nuggets/tenders add the raw chicken to a dish and pour over the dill pickle juice. Cover and place in the refrigerator to marinate.
- 30 minutes before you are ready to cook. Remove the chicken from the dill pickle juice and rise. Set aside.
- Gather your ingredients.
- Preheat your oven to 400.
- Prepare your baking sheets lined with parchment paper or rack (preferred method).
- Prepare pork rinds/chicharrones by pulsing in a food processor until they resemble coarse bread crumbs.
- In a small bowl beat together well the eggs and heavy cream.
- In another medium bowl mix together all dry ingredients well.
- Set up an assembly line. Raw chicken, then egg and cream mixture, then the dry ingredients, then prepared pan.
- Using one hand for the wet ingredients dredge each tender in the egg mixture. I usually flip the chicken a couple of times.
- Pick the chicken up from the egg mixture using your wet hand and drop it into the dry ingredient bowl. Then using your other dry hand begin to push the dry ingredients into the sides of the chicken and pour some dry ingredients onto the still wet top side of the tender. Then, still using the dry hand, push the dry ingredients into the tender.
- You can flip the chicken if needed. Just be sure there is “breading” on all sides of the chicken. Using the dry hand place the chicken on the prepared baking sheet.
- You can cut up the chicken into cubes and do the same thing but it will take much longer! This mom did chicken strips… enough said. Ha!
- Bake on the rack at 400 for 15 min or until cooked through.
- Serve alone or with some easy cauliflower tots!

Ingredients:
- 1 pound boneless, skinless chicken breast (or tenderloins)
- 1/2 cup dill pickle juice
- 1/4 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon celery salt
- 1/2 teaspoon sweet paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
How to cook:
- I started with chicken tenderloins and cut them up into 1-inch pieces. Added them to a bowl, large enough so I could marinate the nuggets.
- Add pickle juice and heavy cream, so that all of the nuggets were covered. Let sit for about 30 minutes. Then I drained the pickle juice and heavy cream, dried them off with a paper towel.
- Added the dried chicken into the mixing bowl with the spice mixture.
- Mix well.
- Spread the coated nuggets on a greased air fryer tray or in a greased air fryer basket (spread them out, do not crowd) Set in the air fryer. And set the temperature to 350 degrees F, for 5 minutes. After 5 minutes, check and see if the chicken is fully cooked. If not add enough time so that they are done with an internal temperature of 165 degrees F. I have an OMNI so I added 3 minutes at 450 degrees F, (broiler setting) you can omit if you don’t have a broil function on your air fryer.
