Ingredients:
  • 1 bunch collard greens (About 16 med-large greens stems removed and washed. )
  • 2 tablespoons olive oil
  • 2 clove garlic (peeled and minced)
  • 1/3 cup onion (chopped in small pieces)
  • 1 1/2 cups vegetable broth
  • 2 tablespoons maple syrup (be sure and use real maple syrup, it makes a difference)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt (more if desired)
  • 1/2 teaspoon black pepper (more if desired )

How to cook:
  1. Prepare Collards
  2. Using a sharp knife trim the large vein of the stem off of the leaf. Discard stems.
  3. Wash leaves under cold water, then pat dry with a paper towel.
  4. Tightly roll the stack of leaves lengthwise, like a cigar. Cut collard greens crosswise into 1/4 inch pieces.
  5. Cook Collards
  6. Place the olive oil in a large pot, heat over medium heat.
  7. Add onion and garlic, saute until slightly tender.
  8. Add collards and saute for 3 minutes.
  9. Now the magic is about to happen; you will make a sweet & sour pot liquor for this recipe. Add vegetable stock, maple syrup, vinegar, pepper, and salt. Cover pot and turn heat to low—Cook for 45 minutes.
  10. Check every 15 minutes or so to be sure there is plenty of pot liquor (liquid). If it seems to be drying out, then turn down the heat a bit and add 1/4 cup or more if need of vegetable broth.
  11. Serve warm, top with Blend 11 nut and seed blend mix or your favorite topping.

Ingredients:
  • 3 cloves garlic (finely diced)
  • 1/2 yellow onion (about 7 ounces diced)
  • 8 ounces bacon (hickory smoke cut into 1.5 inch pieces)
  • 1/4 cup apple cider vinegar
  • 1 1/2 cup chicken stock
  • 3 bunches collard green (between 1 1/2 to 2 pounds destemed and cut into strips)
  • dry red wine
How to cook:
  1. If your collards are not already cut up then you have to remove the thick part of the stem and cut into strips. This is clearly demonstrated in the video if you've never cut up collards before. Wash them thoroughly.
  2. In a large pot over medium low heat add the bacon, cooking until halfway done. Next add the onion. Cook until bacon is crisp and onion begins to brown around the edges.
  3. Add the garlic allowing to saute for 1 to 2 minutes until fragrant. Then add the paprika and crushed red pepper. Cook for 30 seconds stirring continuously being careful to not burn the paprika. Quickly deglaze with a dry red wine. I use a cabernet.
  4. Add the apple cider vinegar, chicken stock, and collards. If collards are to the top of the pot, cover and allow to wilt down for about ten minutes. Stir thoroughly, cover and reduce heat to low.
  5. It will take 1 to 2 hours to finish cooking. Stir periodically. If liquid levels fall too low add extra water or chicken stock. When tender add salt and black pepper to taste and serve.

How to cook:
  1. Instant Pot Collard Greens
  2. Set your Instant Pot to saute and spray with cooking spray.
  3. Once the pot is heated, add the bacon. Cook for 5 minutes. Add the onion and cook for another 8 minutes.
  4. Next, stir in the garlic and cook for an additional 1 minute.
  5. Add 1 cup of the broth to the pot, and use a wooden spoon to scrape up anything stuck to the bottom of the pot.
  6. Add the remaining chicken broth, apple cider vinegar, Old Bay seasoning, celery salt, crushed red pepper flakes, and pepper to the pot. Stir to combine.
  7. Add the collard greens to the pot.
  8. Hit cancel/warm and place the lid on the pot.
  9. Let it sit for 5 minutes or until the collard greens begin to wilt.
  10. After checking to ensure that the collard greens have wilted down, replace the lid and set to seal.
  11. Set the Instant Pot to high pressure for 5 minutes.
  12. Once the time is up, allow the pressure to release naturally.
  13. Season to taste and serve warm with hot pepper sauce.

How to cook:
  1. Use a paring knife to shave off the thick part of the collard green stems. (See photo in the post above to see how to do this.)
  2. Lay out the collard leaves and spread 2 tablespoons (30 grams) cauliflower hummus on each, leaving a 1-inch (2.5 centimeter) border without it, so that it doesn't seep out. Top with cucumbers, bell peppers, red onions, tomatoes, and avocado, in that order. Place all the veggies lengthwise in the same direction, perpendicular to the length of the leaf.
  3. Wrap the collard green wraps, starting with the wide side. Fold in the ends first and then roll up like a burrito. (You'll want to roll parallel to the way the veggies are cut and laid out.)
  4. Place seam side down and repeat with the remaining collard wraps.
