  • 2 tbsp Olive oil
  • 1/2 large Onion ((sliced into thin quarter moons))
  • 8 oz Cremini mushrooms ((sliced))
  • 1 lb Ground beef
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 2 cloves Garlic ((minced))
  • 1 cup Beef bone broth
  • 2 tbsp Coconut aminos ((optional))
  • 1/2 cup Sour cream
  • 2 oz Cream cheese

How to cook:
  1. Heat the olive oil in a large saute pan over medium heat. Add the onions and mushrooms. Saute for about 10 minutes, until onions and mushrooms are soft and browned, and extra liquid has evaporated.
  2. Increase heat to medium-high. Push the mushrooms and onions to the sides, and add the ground beef to the center of the pan, and season with salt and pepper. Cook for 8-10 minutes, stirring occasionally and breaking the beef apart with a spatula, until beef is cooked through. Once it starts to cook through a bit you can mix it with the mushrooms and onions.
  3. Make a well in the center and add the minced garlic. Saute for about a minute, until fragrant, then stir in with the meat.
  4. Add the bone broth and coconut aminos, if using. Bring to a boil, then simmer for 5 minutes, until most of the liquid is reduced but a little is left.
  5. Stir in the sour cream and cream cheese, until smooth.
  6. Serve over spaghetti squash.

  • Broccoli 750g or 1.65 Pounds
  • Garlic 1 Bulb Chopped
  • Salt and Pepper
  • Cayenne Pepper 3 Tablespoons
  • Xanthan Gum 1 Teaspoon

How to cook:
  1. Throw in the ground beef to your crockpot and break up any chunks.
  2. Finely chop a whole bulb of garlic into small pieces and mix in with the beef.
  3. Add some cayenne pepper or paprika to spice it up a bit. For this recipe, I've added three tablespoons of cayenne pepper.
  4. Add salt and black pepper to taste. I've eyeballed it and sprinkled on liberally. Careful not to add too much as its harder to take away.
  5. Combine everything and cook on low for 4 hours.
  6. After your minced beef has browned, wash and chop the broccoli into small pieces then add to the crockpot.
  7. Add a teaspoon of xanthan gum and give everything a thorough stir.
  8. Cover again and cook for about 30 minutes until the broccoli is tender and the sauce has thickened.
  9. Give it all one final stir to let the xanthan gum do its magic and serve up.
  10. Top with a dollop of sour cream, grated cheese, or some baby salad leaves for garnish and enjoy.

How to cook:
  1. In a slow cooker place the chopped onion, minced garlic, peppercorns, bay leaf and water. Set aside.

  3. Evenly pat the rub on all sides of the roast.
  4. In a large skillet heat the olive oil over high heat.
  5. Add the roast and sear on each side for 2 to 3 minutes.
  6. Transfer the roast to the slow cooker.
  7. Deglaze the pan with the balsamic vinegar and pour over the roast.
  8. Cover with a lid and cook on low for 8 hours.
  9. Remove the roast from the slow cooker.
  10. To make the gravy, strain the cooking juices and place in a saucepan.
  11. Bring to a boil over medium high heat and cook until reduced to 1/2 cup.
  12. Add the cream cheese and heavy cream and mix to combine.
  13. Simmer until the gravy is warmed.
  14. Slice the roast and serve with gravy.
