Ingredients:
  • 6 cups broccoli florets (steamed)
  • 2 tbsp butter (melted)
  • 6 oz cream cheese (softened)
  • 1 cup heavy whipping cream
  • 2 tsp sour cream
  • ¾ tsp onion powder
  • ¾ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp dry mustard powder
  • ¼ tsp pepper
  • 2 tbsp Parmesan cheese
  • ½ cup gruyere cheese (about 8 oz.) (packed)
  • 1 ½ cups cheddar cheese, shredded (packed)
  • 2 ½ cups diced smoked ham (small cubes)
  • Parsley for garnish

How to cook:
  1. Preheat oven to 400°F and grease a 9x13" casserole dish.
  2. Steam broccoli until it is al dente (still slightly crunchy).
  3. In a large bowl, add softened cream cheese and melted butter and blend until combined. Then whisk in heavy whipping cream and sour cream.
  4. Add spices, Gruyere and Parmesan cheeses, and ¾ cup of the shredded cheddar.
  5. Before adding the broccoli and cubes of ham, make sure they are drained thoroughly. Once they are drained, stir them in as well.
  6. Pour mixture into your greased 9x13" casserole dish.
  7. Sprinkle the remaining cheddar cheese over the top.
  8. Sprinkle parsley on top.
  9. Bake for 25-30 minutes.
  10. Let sit for 10 minutes before serving to allow to cool and thicken.

  • 8 oz ham, cooked and diced
  • 2 cups broccoli, chopped and steamed
  • 2 cup cauliflower, chopped and steamed
  • 1 oz cream cheese
  • 1 1/4 cup cheddar (divided into 1/2c and 3/4c)

How to cook:
  1. Preheat oven to 400 degrees F. Prepare a baking or casserole dish by spraying with nonstick cooking spray.
  2. Chop and steam both the broccoli and cauliflower separately. You can do this anyway you wish. I like to use microwave steamer pot. But you can do it with boiling water or even use frozen. No matter which way you do it, make sure to drain off any excess liquid as that will make the casserole watery.
  3. Add the cooked cauliflower, cream cheese and 1/2 cup of cheddar cheese to a high speed blender and blend until smooth and creamy. If it's too thick add a tablespoon of 2 of water. It should be thick and creamy though.
  4. Add the ham and broccoli to a baking pan then mix it with the cream sauce. Top with the remaining cheddar cheese. Bake for 15-20 minutes until browned well on the top.

How to cook:
  1. Preheat oven to 400°F.
  2. Place broccoli in a large skillet with ½ cup water. Cover and simmer 4-6 minutes or until tender crisp. Drain well.
  3. Meanwhile, melt butter in a medium skillet over medium heat. Add onion powder, cream, broth, and cream cheese. Cook until smooth and slightly thickened, about 5 minutes.
  4. Remove from heat and stir in ¾ cup cheddar cheese and ¼ cup Swiss cheese until melted. Season with salt and pepper.
  5. Toss broccoli and ham with the cheese sauce. Place in a greased 2 quart casserole dish and top with remaining cheese.
  6. Bake 25-30 minutes, or until cheese is melted and bubbly.

  • 7.10 oz ham (200g)
  • 1 cup full-fat cream cheese (200g)
  • ¾ cup heavy cream (6.8 fl oz/200ml)
  • ¾ cup shredded cheddar (2.8 oz/80g)
  • 2 tsp freeze-dried onions
  • ¼ tsp salt
  • ¼ tsp nutmeg
  • ⅛ tsp garlic powder
  • ⅛ tsp pepper

How to cook:
  1. Remove the florets from the broccoli and cut them into bite-sized pieces.
  2. Take a large pan and cover the bottom (about 0.4" high) with water. Dissolve some salt in the water and bring the water to a boil. Once the water boils, add the broccoli florets to the pan and steam them with the lid closed on medium heat for about 7-8 minutes. Test with a fork or knife if your florets are done.
  3. While the broccoli is steaming, place the ingredients for the sauce in a small saucepan and let simmer over medium heat for about 6-7 minutes until the cream cheese has melted and everything is well combined. Season the sauce and set aside briefly while you drain the broccoli and transfer it to a casserole dish.
  4. Preheat your oven to 350°F/180°C.
  5. Cut the ham into small bite-sized pieces and add it to the broccoli in the casserole dish.
  6. Pour the sauce into the casserole dish as well and mix everything thoroughly until the sauce is evenly distributed. Lastly, sprinkle a small amount of freeze-dried onions and cheddar over your casserole.
  7. Bake the keto ham and broccoli casserole for about 20 minutes in your preheated oven and serve it fresh out of the oven.
