Ingredients:
  • 3 large eggs
  • 1 / 2 cup coconut milk or heavy whipping cream (120 ml/ 4 fl oz)
  • 1 / 2 cup unsweetened almond milk (120 ml/ 4 fl oz)
  • 1 / 2 cup extra fine de-oiled almond flour (60 g/ 2.1 oz)
  • 1 / 4 cup unflavoured whey protein powder (25 g/ 0.9 oz)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian herb mix (oregano, basil, thyme)
  • 1 / 2 tsp baking soda
  • 1 / 2 tsp sea salt
  • 2 tbsp duck fat or ghee (30 ml)
  • 8 average gluten-free sausages (480 g/ 16.9 oz)

How to cook:
  1. Preheat the oven to 200 °C/ 400 °F (fan assisted), or 220 °C/ 425 °F (conventional). Once hot, grease a baking pan with the duck fat and place the sausages in. Transfer into the oven and bake for about 10 minutes. When done, remove from the oven and set aside. Meanwhile, prepare the batter by mixing the eggs with coconut milk.
  2. Add almond milk and whisk until well combined.
  3. Add the baking soda and onion powder.
  4. Add garlic powder, dried herbs and salt. Mix until well combined.
  5. Mix the de-oiled almond flour and protein powder.
  6. Sift the dry mixture through a sieve and mix in the batter. This way you will avoid lumps and achieve a smooth texture.
  7. Pour the batter into the pan with sausages and place back in the oven for 30-35 minutes. When done, remove from the oven and set aside to cool down.
  8. Enjoy hot or cold and store in the fridge for up to 4 days. Try with freshly chopped vegetables, Spicy Chocolate BBQ Sauce or Dijon mustard (you can make your own).

Keto Spicy Toad In The Hole
This is our take on the American toad in the hole, not to be confused with the British toad in the hole. This recipe is made with an over easy egg fried in a spicy chili sauce encased in our delicious keto bread. And dont forget, no American breakfast is finished without crispy bacon!

  • 1 egg
  • 1 slice thick bacon (we used hatch chilli bacon)
  • 1/2 tbsp Spicy chili crisp (Laoganma)
  • 2 tbsp butter (softened)
  • sprinkle fresh parsley (if desired)
  • 1 bag Ketonia Baking Mix
  • 1 cup warm water
  • 1 tbsp instant yeast
  • 1 tsp honey ((the yeast will eat the sugar))
  • 2 eggs
  • 2 tbsp butter (softened)

How to cook:
  1. Ketonia bread
  2. Mix honey and instant yeast in warm water and stir. Let sit for 5 minutes. Add eggs and stir. Add Ketonia bread mix and butter. Mix in a stand mixer with a paddle attachment on medium speed for 2-3 minutes. You can also knead by hand for 10-15 minutes or until smooth. Shape into a smooth ball and let sit, covered, for 30 minutes. Shape dough into a loaf and place in a loaf pan for another 30 minutes, covered. Bake on 400* for 30 minutes or until internal temperature reaches 200*. Let cool for 1 hour. Slice loaf into 12 slices.
  3. Toad In The Hole
  4. Using a circle cookie cutter or the rim of a glass, cut a circle out of the center of one piece of bread. Keeping the circle inside of the bread, smear softened butter on one side of the bread.
  5. Slice your piece of bacon in half. On a small skillet, cook your pieces of bacon until crisped to your liking. Remove bacon from skillet. Place bread, including circle piece, butter side down on the hot skillet. Toast until golden brown. Remove bread from skillet.
  6. Lower the heat to medium and let the skillet cool slightly. Place 1 tbsp of butter onto the skillet and mix in the spicy chili. Smear this mixture around the pan so the bread will fit ontop of it. Place the bread, untoasted side down, into the chilli. Remove the center of the bread and toast alongside the bread. Crack an egg into the empty center of the toast. Place the crispy bacon pieces ontop of the bread. Cover the skillet with a lid and let cook for about 2 minutes or until all of the egg whites have turned opaque. Sprinkle with fresh parsley & enjoy!

  • 6-8 low carb sausages
  • 50g gram flour (chickpea flour), sifted
  • 2 eggs, beaten
  • 150ml almond milk
  • 1 tsp baking powder
  • Salt & pepper to season

How to cook:
  1. Preheat oven to 200℃/400℉/gas mark 6.
  2. Bake sausages in the oven for 10 minutes or until lightly browned.
  3. While the sausages are cooking, prepare the batter. Whisk together the gram flour, baking powder, eggs, milk, salt and pepper. Continue to whisk until the batter is smooth and free from lumps.
  4. Remove the sausages from the oven and turn the temperature up to 210℃/415℉/between gas mark 6 and 7.
  5. Choose a baking dish that is a suitable size for a toad in the hole. Grease the dish with butter or oil to prevent sticking.
  6. Place the sausages in the dish and pour the batter into the dish. Gently shake the dish so the batter is evenly distributed between the sausages.
  7. Bake the toad in the hole for 10 minutes. After 10 minutes, turn the oven temperature down below 200℃/400℉/gas mark 6 and bake for another 5-10 minutes. Do not open the oven door until the toad in the hole has been in the oven for at least 15 minutes, otherwise the batter may collapse.
  8. When the batter has risen and is at the desired crispness, remove from oven and serve.
