  • 150 gram granita biscuits
  • 80 gram butter, melted
  • 4 egg yolks
  • 400 gram can sweetened condensed milk
  • 1 tablespoon finely grated lime rind
  • 1/2 cup (125ml) lime juice
  • 300 millilitre thickened cream, whipped

How to cook:
  1. Preheat oven to moderate (180°C/160°C fan-forced).
  2. Process biscuits until fine. Transfer to a bowl; stir in butter. Press mixture over base and side of a 23cm pie plate. Place plate on oven tray and bake for 10 minutes or until browned lightly. Cool.
  3. Beat egg yolks in a small bowl with an electric mixer until light and fluffy. On low speed, add condensed milk, rind and juice.
  4. Pour the mixture into prepared crust. Bake for about 12 minutes or until just set. Cool to room temperature, then refrigerate until required. Remove pie from refrigerator 30 minutes before serving.
  5. Cut pie into wedges. Serve with whipped cream and extra lime rind, if desired.

Key Lime Pie originated in Key West in USA, but has become a favourite here in Aus. Delicious and creamy this is one of the yummiest desserts I have had.

  • 375 g Ready-made Or Homemade Sweet Shortcrust Pastry
  • 4 Egg Yolks
  • 395 g Tin Condensed Milk
  • 1/2 cup Lime Juice
  • 2 tsp Lime Zest
  • 1 Lime Slices
  • 1 Icing Sugar
  • 1 Whipped Cream

How to cook:
  1. Preheat the oven to 180 degrees. Grease loose bottomed flan tin.
  2. Roll the dough out between two sheets of baking paper until it is large enough to fit into the tin.
  3. Remove the top sheet of paper and place the pastry into the tin.
  4. Gently press the pastry into the tin, allowing any excess to hang over the sides. With a sharp knife trim away any extra pastry.
  5. Line the pastry shell with a piece of crumpled baking paper that is large enough to cover the base and side of the tine and pour in some baking beads or rice.
  6. Bake for 10 minutes, remove the paper and beads and return the pastry to the oven for another 4-5 minutes, or until the base is dry. Leave to cool.
  7. Beat the egg yolks, condensed milk, lime juice and zest in a large bowl for 2 minutes, or until well combined. Pour into the pie shell and smooth the surface.
  8. Bake for 20-25 minutes, or until set. Allow the pie to cool, then refrigerate for 2 hours, or until well chilled.
  9. Decorate with lime slices, dust with sifted icing sugar and serve with whipped cream.

  • 250 g plain sweet biscuits (like Arnott's Granita, Marie or Graham Crackers)
  • 125 g butter (melted)
  • 395 g sweetened condensed milk (full fat (not skim))
  • 1/2 cup lime juice
  • 4 eggs (large, room temperature)
  • 1 tsp lime zest (grated)
  • 300 ml whipping or thickened cream (for topping)
  • 1 tbs lime zest (for grating)

  2. Preheat oven to 160 degrees celsius (fan-forced).
  3. Grease a 22cm loose-bottomed tin and set aside.
  4. Crush the biscuits until they resemble fine crumbs. Add the melted butter and mix to combine.
  5. Press the biscuit mixture firmly into the base and sides of the tin. Bake for 10 minutes in the oven. Remove and allow to cool.
  6. Using electric beaters or a stand mixer, beat the sweetened condensed milk, lime juice, eggs and lime zest until thick and creamy (approximately 4-5 minutes).
  7. Gently pour the liquid into the prepared base and bake for 15 minutes or until set. Allow to cool in the fridge for a minimum of 4 hours (preferably overnight).
  8. Serve with whipped cream and extra grated lime zest.
  9. Thermomix Method
  10. Preheat oven to 160 degrees celsius (fan-forced). Grease a 22cm loose-bottomed tin and set aside.
  11. Melt the butter in the Thermomix for 3 minutes, 80 degrees, Speed 2 (or until melted). Add the biscuits and crush for 5 seconds, Speed 8. Scrape down the sides of the bowl and repeat for a further 5 seconds.
  12. Firmly press the mixture into the base and sides of the prepared tin and bake for 10 minutes. Remove from oven and allow to cool.
  13. Place the sweetened condensed milk, lime juice, eggs and lime zest into a clean and dry Thermomix bowl and mix for 45 seconds, Speed 4. Scrape down the sides and mix for a further 45 seconds or until thick and creamy.
  14. Gently pour the liquid into the prepared base and bake for 15 minutes or until set.
  15. Allow to cool in the fridge for a minimum of 4 hours (preferably overnight). Serve with whipped cream and extra grated lime zest.

Did you know that the Key-islands Lime is yellow like a lemon? And from these, the original Key Lime Pie is made. However, we don't have them in Slovakia, so I need to take what the grocery store offers. Nevertheless, even with green limes this cake is amazing, refreshing and a perfect dessert for a summer brunch with friends.

Ingredients:
  • 400 g graham crackers
  • 400 g unsweetened condensed milk
  • 130 g melted butter
  • 150 g brown sugar
  • 4 whole egg yolks
  • 4 whole limes
  • 1 cup whipped cream for decorating
How to cook:
  1. Crush the crackers till they are flour-alike and mix them with melted butter. With a spoon, push the mixture on the bottom of a cake form and also on the sides.
  2. Mix the condensed milk with the brown sugar and zest of 2 limes, till the sugar dissolves. The add the egg yolks and whisk well.
  3. Add the juice from 4 limes into the condensed milk and whisk. The juice causes thickening of the milk. Pour the filling into the prepared crust and bake on 180 degrees celsius for about 45 minutes.
  4. Let cool completely, I recommend you place the cake into the fridge for several hours, so the filling can set.
  5. Serve decorated with whipped cream and small pieces of lime.
