- Prepare the dough
- Start by combining yeast, warm water and sugar in your stand mixer bowl. Whisk together with your 6-Wire Whip Attachment and let sit for a few minutes. Then, add flour and salt to your mixing bowl. Attach the beater blade and mix the ingredients on low speed until fully mixed, then add a little olive oil and beat until combined. After you’ve combined the dough, knead it, proof it and then punch the dough to release air bubbles. You can tell when the dough has been properly kneaded when you see small strings of dough appear when pull off a small piece of it. It’s best to start proofing in the refrigerator to allow the dough to rest after kneading.
- Stretch and shape the pizza dough
- Allow the dough to come to room temperature before stretching and shaping. On a lightly oiled work space, gently flatten the dough into a disk with your hands or a rolling pin. Place the dough on a pizza pan, then stretch and shape the dough into a circle.
- Add toppings and bake
- Once your dough has been stretched out to your preferred size, add your favorite pizza toppings. You can use traditional toppings like red sauce, mozzarella and pepperoni or sausage, or get creative with toppings like prosciutto, fig and goat cheese, or barbeque chicken and cheddar. Bake your pizza for 12–15 minutes and let cool before serving.

- In the bowl of a stand mixer, combine all ingredients (except cornmeal). Leave out a small amount of the water.
- Using the dough hook from the mixer, stir until a loose dough forms. If a dough doesn’t form, add the rest of the water. If the dough is extremely wet and sticky, and a pinch of flour.
- Attach the dough hook to the mixer and start on a low speed. Gradually increase the speed to medium until a ball forms. This should take about 30 seconds. If the dough does not release from the sides of the bowl, add a pinch of flour. If the dough is very dry and floury, add a small amount of water.
- Once the dough forms into a ball, allow the mixer to knead for 8 minutes at medium-high.
- After the kneading is finished, divide the dough in half. Using floured hands, gently shape each dough into a boule. Set each boule on a floured surface and dab with a little bit of olive oil to keep moist. Cover with a damp towel and allow to rise for 45 minutes to 1 hour.
- To stretch the dough, pick up the risen dough and gently shape it into a circle. Do not over-work or fold the dough. Drape the dough over both of your knuckles and rotate it around, allowing gravity to stretch it into a circle. If the dough starts to resist stretching, put it down and allow it to rest for a few minutes, at which point it will stretch more easily.
- Sprinkle a little bit of cornmeal onto a pizza peel or rimless baking sheet. Place the stretched dough onto the peel and quickly add toppings. Cook at 500° for 5-7 minutes until browned. Enjoy!

- 5 1/2 + 1/8 cups AP flour (or 9 cups see notes)
- 1 TBSP instant yeast
- 3 cup warm water (you will use 3/4 cup + 2 1/4 cups)
- 1 TBSP salt
- 1/2 tsp sugar
- 1/4 + 1/8 cup olive oil
How to cook:
- In the bowl of stand mixer, combine 3/4 cup of warm water, yeast, sugar and salt. Let stand for 1 min.
- Add 2 1/4 cups warm water, 1/4 + 1/8 cup olive oil and follow the steps for adding the flour.
- IMPORTANT: (if using an active yeast)
- If you are using the active yeast: Add warm water (110 F to 120 F) to the bowl, then add yeast and sugar. Stir. Let it sit for about 10 to 15 minutes. Then add 2 1/4 cups warm water, 1/4 + 1/8 cup olive oil, 1 TBSP salt. Continue to the adding flour.
- ADDING FLOUR
- Attach the dough hook to the mixer and start on a low speed. (just for a few seconds)
- Then add 3 cups of flour and mix until combined. (about 1 minute)
- Your next step is to add the rest of the flour which is 2 1/2 +1/8 cups.
- Keep mixing in a low speed for about 2 minutes and then gradually increase the speed to medium until a ball forms.
- Then let the mixer kneed your pizza dough for about 6 minutes.
- IMPORTANT: If the dough doesn't release from the sides of the bowl, add 1 or 2 TBSP of flour.
- Once the kneading is finished, shape the dough and coat with olive oil.
- Cover with kitchen towel and let dough rise in warm area until double in volume, about 60 to 90 minutes.
- Remove the kitchen towel from bowl and place your fist in the center of the dough to punch down.
- Fold the dough back onto itself 5 to 6 times. (it doesn't need to be perfect)
- Then divide the dough into 6 to 9 equal portions or form the dough into individual balls.
- Lightly coat each ball with olive oil.
- Wrap each ball with plastic wrap and slide into a freezer bag.
- You can freeze pizza dough for up to 3 months.
