  • 1 tablespoon vegetable oil
  • 4 loin lamb chops, or shoulder chops
  • 2 tablespoons all-purpose flour
  • 2/3 cup beef broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 clove garlic, minced
  • 1 tablespoon tomato paste
  • 4 stalks celery, thinly sliced
  • Dash kosher salt, or to taste
  • Freshly ground black pepper, or to taste
  • Chopped fresh parsley, for garnish

How to cook:
  1. Gather the ingredients.
  2. Heat vegetable oil in a skillet or sauté pan over medium-high heat.
  3. Coat lamb chops with flour and brown them quickly on both sides in the hot oil.
  4. Transfer lamb chops to slow cooker.
  5. In a medium saucepan, combine beef broth, tomatoes, minced garlic, tomato paste, and sliced celery. Add salt and pepper to taste. Bring mixture to a boil, stirring occasionally.
  6. Pour hot tomato mixture over lamb chops in slow cooker.
  7. Cover and cook on high for 30 minutes, then turn to low and continue cooking for 5 to 7 hours.
  8. Adjust seasoning to taste and serve chops sprinkled with plenty of chopped parsley.

  • 4 bacon strips
  • 4 lamb shoulder blade chops, trimmed
  • 2-1/4 cups thinly sliced peeled potatoes
  • 1 cup thinly sliced carrots
  • 1/2 teaspoon dried rosemary, crushed
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped onion

How to cook:
  1. Wrap bacon around lamb chops; secure with toothpicks. Place in a 3-qt. slow cooker. Cover and cook on high for 1-1/2 hours.
  2. Remove chops; discard toothpicks and bacon. Drain liquid from slow cooker. Add potatoes and carrots; top with lamb chops. Sprinkle with rosemary, garlic powder, salt, pepper, onion and garlic.
  3. In a small bowl, combine soup and milk. Add mushrooms. Pour over the chops. Cover and cook on low for 4-6 hours or until meat and vegetables are tender.

  • 4 lamb shoulder chops
  • 1 large onion, sliced
  • 2 cups butternut squash, diced
  • 2 sprigs of fresh thyme
  • 1 tablespoon garlic, chopped
  • 1 tablespoon cumin
  • 1 teaspoon cinnamon
  • 1 teaspoon all spice
  • 1/2 teaspoon oregano
  • 1 can of whole plum tomatoes

How to cook:
  1. In a dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Add the onions and butternut squash to the pot and cook until they soften; about 5 minutes. Remove from the pan and set aside.
  2. Add some more olive oil to the pan, and add the lamb chops to the pan. Sear each side for 5 minutes, until brown. Remove from the pan an set aside. To the same pan add the tomatoes, thyme, parsley, and all the seasonings. Stir together and add the sautéed onions and squash as well as the lamb; back to the pan.
  3. Place in the oven at 280 degrees, and allow to cook for 1 hour; checking periodically. Serve immediately with your choice of sides (rice, couscous, and mashed potatoes).

  • 1 large onion, cut and separated into rings
  • 1.5 kgs. (about 3.4 lbs.) lamb chops, extra fat trimmed off
  • 4 cloves of garlic, minced
  • 2 tablespoons red wine vinegar (balsamic is a good substitute)
  • 2 tablespoons fresh rosemary
  • ½ teaspoon salt
  • ½ teaspoon black pepper, freshly ground
How to cook:
  1. Place the onion rings in the bottom of the slow cooker, covering it completely.
  2. Add the lamb chops on top of the onions, then add in the garlic, red wine vinegar, rosemary, salt and pepper.
  3. Turn the slow cooker on low for 6-8 hours, and cook until very tender, and the meat is falling off the bone.
