Summer is just around the corner! Prepare for the change of season with this divine Lemon and Condensed Milk Fridge Tart recipe.

Ingredients:
  • 2 packets tennis biscuits
  • 1 tin condensed milk (cooled)
  • ¾ cup sugar
  • ½ cup fresh lemon juice
  • 750 ml full cream milk
  • 2 tablespoons corn flour (maizena)
  • 2 tablespoons flour
  • 2 eggs, yolk and white separated
How to cook:
  1. Prepare a tart dish large enough to take a volume of about 1 litre.
  2. Arrange tennis biscuits at the bottom of the dish.
  3. Using an electric mixer, add the condensed milk and lemon juice to the bowl and mix on high speed until the volume has almost doubled.
  4. Add the lemon juice and condensed milk mixture on top of the biscuits and place in the refrigerator.
  5. Add a little of the measured milk in a bowl, add the flour, sugar and corn flour. Mix until a smooth mixture has formed.
  6. Bring the milk to a boil over high heat, then add the corn flour, sugar and flour mixture slowly, stirring constantly. Let the mixture boil slowly for 5 minutes at least, longer if you can, this will ensure it will set. It must be a thick consistency.
  7. Using an electric mixer, beat the egg yolks, add a little of the warm milk mixture to the yolks, then very slowly add all the milk mixture until all is combined.
  8. Whisk the egg whites until stiff and frothy and gently fold into the mixture.
  9. Take out the prepared dish, add another layer of biscuits, then the milk custard, repeat until the last layer is the milk custard.
  10. Crumble biscuits on the top and refrigerate for at least 6 hours, giving it time to set.

Easy peasy lemon squeezy! Sweet, creamy and lemony pots topped with a fresh mint syrup. A true taste of summer.

  • 397g Carnation Condensed Milk
  • 150ml Double cream
  • (about 150ml) Finely grated zest and juice of 4 large unwaxed lemons
  • 1tbsp Fresh mint leaves
  • Squeeze of lemon juice
  • 1tsp Granulated sugar
  • Lemon zest
  • Fine biscuits
  • 397g Carnation Condensed Milk
  • 150ml Double cream
  • (about 150ml) Finely grated zest and juice of 4 large unwaxed lemons
  • 1tbsp Fresh mint leaves
  • Squeeze of lemon juice
  • 1tsp Granulated sugar
  • Lemon zest
  • Fine biscuits
How to cook:
  1. Beat the cream to softly whipped peaks.
  2. Combine the lemon zest and juice with the condensed milk, the mixture should thicken.
  3. Fold the whipped cream into the condensed milk mixture until combined. Spoon the lemon cream into six small dishes or wine glasses and chill until ready to serve.
  4. To serve very finely chop the mint leaves and mix with a squeeze of lemon juice and the sugar (pound to a sauce with a pestle and mortar if you have one). Add a teaspoonful of the sweet mint sauce to each dish and serve curls of lemon zest and fine biscuits. Try swapping the 4 lemons for 5 limes next time you make this!
