  • 1 2/3 cups of sugar
  • Zest of 3 large lemons
  • 3/4 cup of lemon juice
  • 1 1/2 sticks of unsalted butter, melted
  • Pinch of salt

How to cook:
  1. In a heavy bottomed saucepann, whisk together the eggs and sugar until the mixture becomes a light foamy yellow.
  2. Add the lemon zest and fresh lemon juice to the egg mixture and whisk in until everything is mixed.

  4. Keep whisking the mixture and bring it to a boil.
  5. When it comes to a boil, turn off the heat and strain the mixture through a fine mesh sieve into a large measuring cup.

  • 2 teaspoons lemon zest

How to cook:
  1. Create a double boiler by bringing 1-2 inches of water to a simmer in a small saucepan. Place a heatproof glass bowl on top and make sure it's not touching the water.
  2. Add the egg yolks, sugar, lemon juice, lemon zest, and salt into the top of your double boiler.
  3. Whisk until completely combined and then continue to whisk as the lemon curd cooks (constant whisking prevents the lemon curd from curdling). Continue to whisk the lemon curd for 10-15 minutes or until it become thick and paler in color (it should be similar to the consistency of hollandaise sauce). If the lemon curd isn’t thickening, turn up the heat and constantly whisk.
  4. Once thickened, remove the glass bowl from the heat. Cut the butter into chunks and whisk into the lemon curd until fully combined and smooth.
  5. If desired, pass through fine mesh strainer and then pour into a glass jar. Let cool to room temperature (about 1 hour) and then cover and store in the fridge for up to 3 weeks.

  4. Pour the mixture into a 2-quart sauce pot on stove top and heat on medium-low, stirring until it begins to simmer and thicken. Once it reaches 170 degrees on a candy thermometer, remove from heat. (This takes approximately 8-10 minutes.)
  5. Serve warm on your favorite baked goods or chill and serve as desired.
