Beans - Lima Bean Soup Recipe
I've never made mom's recipe but was meaning to ask for it after one day picking up a couple cans of lima beans for no reason. It'd been months since buying them and I purchased a new bowl that I wanted to use for soup photos so I scrounged around in the pantry and fridge.
Lima Bean and Kielbasa Soup (Crock Pot)

This makes a large batch (12 servings), so you may want to freeze some portions for later! Taken from the Betty Crocker Slow Cooker Cookbook.

Ingredients:
- 1 (16 ounce) package dried lima beans, sorted and rinsed
- 1 lb kielbasa, cut into 1/4 inch slices
- 2 medium carrots, cut into 1/4 inch slices (about 1 cup)
- 2 stalks celery, chopped (about 1 cup)
- 1 large onion, finely chopped
- 2 garlic cloves, finely chopped
- 6 cups water (I use 3 cups water, 3 cups broth, any kind works)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 (14 1/2 ounce) can diced tomatoes, undrained

Ingredients:
- 1 can baby lima beans, drained
- 1 ham steak, cut in bite size pieces
- 5 cups chicken broth
- 2 cups shredded cabbage or 1 cup of fresh spinach
- 1 carrot, chopped in 1 inch pieces
- 1 onion, chopped
- 1 garlic clove, crushed
- 1/2 tsp dried basil or marjoram
- 1/2 tsp dried red pepper flakes, crushed
- 2 tbls stewed tomatoes
- 1/2 tsp salt
Nutrition:
- Calories: 450 kcal
- Serving Size: 1 serving
- Sort through beans, rinse well and drain.
- Cook ham in skillet until slightly browned.
- Place all ingredients in the crock pot and stir. If you are using the spinach, do not add at this time. Cover and cook on low for approximately 10 hours or until beans are tender. When beans are tender, add washed spinach and cook anther minute or two.
- Serve topped with some thinly grated jack cheese and some homemade croutons. (recipe for croutons is under "Healthy Soups" on this site)

- If you are using your Instant Pot/Multi-cooker as your slow cooker, I recommend sauteing the onion in a little vegetable broth before adding everything else. If using a crock pot/slow cooker, forgo this step.
- Place onions, potatoes, tomatoes, lima beans, rice, garlic, oregano, basil, onion powder, black and red peppers, and 1/2 teaspoon of salt into a 6-qt. slow cooker. Stir to mix, then add vegetable broth and stir again.
- Cook stew on high for 7 to 9 hours, or until the beans and potatoes are tender. Once done, stir in spinach until wilted and season with remaining lemon juice, salt, to taste. Add any other seasonings you see fit.
- Serve hot, or transfer to 4 wide mouth jars, refrigerate for up to 7 days, or freeze for 6 months.

Growing up, I loved my mom's ham and lima bean soup. It's just good old comfort food for me.
