  • 1 tbsp olive or canola oil
  • 2 lb London broil or top round
  • 1/2 cup water or beef stock (for the sauce)
  • 1 cup water or beef stock (for the Instant Pot)
  • 1/4 cup red wine vinegar
  • 1 tbsp tomato paste
  • 1 1/2 tsp dried thyme
  • 1 tsp garlic salt
  • salt and pepper (to taste)

How to cook:
  1. In a mixing bowl, combine 1/2 cup of water or beef stock, vinegar, tomato paste, and spices.
  2. Put the London broil inside and cover. Marinate for 3 hours or overnight in the fridge.
  3. Remove the beef from the marinade and pat dry.
  4. On the Instant Pot, press "saute" and add oil.
  5. Add the beef and sear on all sides until brown.
  6. Pour in marinade and that one extra cup of water or stock.
  7. Lock the lid and cook at high pressure for 10 minutes.
  8. When cooking time is complete, wait for a natural pressure release.
  9. Open the lid and take out the beef.
  10. Season with salt and pepper and serve.

  • 1 tablespoon butter
  • 3 lb. London Broil
  • 1 1/2 cup water
  • 2 envelops Lipton Onion Soup Mix
  • 2 lbs. red potatoes cut into wedges
  • 4 large carrots (washed, peeled and cut into circles)
  • 1 tablespoon minced garlic (I used jarred minced garlic)
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 large dried bay leaf
  • 1 teaspoon small sprig fresh rosemary or 1 teaspoon dried rosemary
  • 1 tablespoon cornstarch mixed with 1 tablespoon of cool water (gravy thickener)

How to cook:
  1. Prep
  2. Cut
  3. Wash, trim, peel, and slice the carrots. Cut them into 1 to 2-inch circles with a sharp knife. Set aside.
  4. Quarter
  5. Wash and cut the potatoes into quarters. Place the potato wedges into a bowl of cold water to prevent browning
  6. Mince
  7. If using fresh garlic mince it
  8. Divide
  9. Cut the London Broil in half so it fits inside the Instant Pot
  10. Pressure cooking
  11. Brown
  12. Turn the Instant Pot on the saute setting and melt the butter. Brown both sides of the London broil. Remove each browned piece of the roast when it is browned and place it in a bowl.
  13. Dissolve
  14. Pour the water into the bottom of the Instant Pot. Add the two envelopes of powdered onion soup mix. Use a wooden spoon to dissolve the onion soup in the water. Mix until all lumps have dissolved. At the same time scrape the bottom of the pot to loosen any stuck-on pieces from browning the meat.
  15. Add
  16. Place a trivet or a silicon sling into the Instant Pot. Place the pieces of beef on top of the trivet in a single layer if possible.
  17. Fill
  18. Drain the potatoes in a colander. Add the drained potatoes on top of the meat around the edges of the pot. Next, add the minced garlic. Place the carrots on top of the potatoes.
  19. Season
  20. Sprinkle with salt and pepper. Add a dried bay leaf and a sprig of fresh rosemary or 1/2 a teaspoon of dried rosemary. Twist the lid on the pressure cooker. Make sure the valve is set to the sealing position.
  21. Heat
  22. Press the manual button and set the timer to 30 to 40 minutes. 40 minutes for a very thick cut of beef.
  23. Pressure Cook
  24. Allow the meat and vegetables to pressure cook. Once the timer has gone off quick release the steam. When the steam is finished releasing carefully remove the Instant Pot lid away from your face to prevent a steam burn.
  25. Remove the vegetables from the inner pot and place them in a serving bowl. Remove the meat from the Instant Pot and place it on a serving platter. Allow the meat to rest 5 to 10 minutes before slicing or shredding the meat.
  26. Rest
  27. While the meat is resting mix the cornstarch with the cold water until lump-free.
  28. Thicken
  29. Turn the Instant Pot on the saute setting. Bring the juices that are left in the inner pot to a simmer. Pour the cornstarch slurry into the liquids. Stir to combine. Allow the gravy to come to a simmer occasionally stirring. Simmer until the gravy has reached the desired thickness.
  30. Serve
  31. Carefully using pot holders lift the inner pot from the appliance and pour the gravy into a gravy boat or bowl. If you want to remove the bits of onion from the gravy strain it through a fine-mesh strainer into a bowl.

  • 1/2 cup olive oil
  • 1/3 cup soy sauce
  • 1/4 cup lemon juice
  • 1/4 cup Worcestershire sauce
  • 3-4 cloves minced garlic
  • 2 Tablespoons Italian seasoning
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 2 pounds London Broil Top Round beef
  • 1 cup beef broth
  • 1 medium yellow onion (sliced)
  • 8 ounces mushrooms (rinsed and sliced)
  • 1 Tablespoon olive oil
  • 1 Tablespoon butter
  • ½ teaspoon dried thyme
  • salt and pepper to taste
  • 1 Tablespoon cornstarch
  • 2 Tablespoons water

How to cook:
  1. Whisk together all of the marinade ingredients in a small bowl. Place the meat in a large resealable bag or container with a lid then pour the marinade over top. Seal the bag or lid, then refrigerate for at least 2 hours, up to overnight.
  2. Set the Instant Pot to Saute mode and allow it to preheat. If you're not making the gravy skip to the next step, otherwise add 1 tablespoon of olive oil and 1 tablespoon of butter to the pot. Add the mushrooms and onions and cook for 6-7 minutes until all of the excess moisture from the mushrooms has cooked off and the vegetables are lightly browned. Then remove the veggies and set aside.
  3. Add 1 tablespoon of olive oil and then add the meat. Sear on each side for around 2 minutes until well browned.
  4. Add 1 cup of beef broth and use a wooden spoon to scrape up any brown bits from the bottom of the pan to avoid a burn warning. Then cover and lock the lid. Set to manual high pressure for 3 minutes.
  5. Allow the pressure to release naturally for 10 minutes. Then vent the remaining pressure before removing the lid. Transfer the meat to a cutting board and let rest for 5 minutes before slicing thinly against the grain.
  6. While the meat rests finish the gravy. Leave the liquid in the pot and set to saute mode. Whisk together 1 tablespoon of cornstarch and 2 tablespoons of water. Then whisk the cornstarch mixture into the pot.
  7. Bring to a simmer and add the mushrooms and onions back to the pot. Season with ½ teaspoon dried thyme and salt and pepper to taste. Cook until thickened, around 2 minutes. Top the sliced meat with gravy and serve.
Notes: London Broil w/ Mushroom Gravy, Heat the oil in the pressure cooker and brown the meat on both sides and set aside. Sauté the onion, mushrooms and garlic until slightly soft.

  • 250 ml stout beer
  • 1 large white onion (peeled and sliced thick)
  • 1 tbsp olive oil
  • salt and pepper (to taste)
  • 1 2 lb London Broil (I used top sirloin steak, 1 1/2 " thick)
  • ½ cup smokey BBQ sauce (plus more for glazing)
  • 2 cup peeled and cut carrots into 2" pieces
  • 1 celeriac (or large turnip, peeled and cubed into 2 " cubes)
  • 2 cup frozen green peas
  • ¼ cup butter
  • 1 tbsp parsley (for garnish)
How to cook:
  1. Pour the stout in the bottom of your instant pot. Add the onion slices.
  2. Place the trivet on top and brush with oil.
  3. Rub the London Broil with olive oil and season with salt and pepper. Place on the trivet and pour over BBQ sauce.
  4. Pressure cook on high for 35 minutes. Instant release pressure.
  5. Set your oven to broil. Place the London Broil on an aluminum foil lined tray. Brush with a layer of more BBQ sauce. Broil for 2-3 min. Tent with foil and set aside until vegetables are ready.
  6. Meanwhile, set the Instant Pot to saute on normal. Add carrots, celeriac and peas. Simmer for 10-15 minutes or until cooked through and sauce has thickened. Remove the vegetables and cover them to keep them warm.
  7. Remove about 1 ½ cup remaining liquid into a heat proof bowl. Stir in the butter into the 1 1½ liquid. Taste for seasoning. Or optionally simmer all of the remaining liquid that's in the Instant Pot and saute on 'normal'. Simmer the sauce until reduced. It took me about 20 minutes. It takes extra time but highly recommended.
  8. Top London Broil with vegetables, sauce and parsley. Serve warm.
