- For the meatballs:
- 500g 5% low fat fat turkey mince
- 1 tbsp fat-free yoghurt
- Pinch salt & pepper
- For the sauce:
- 4 tbsp Chinese rice vinegar
- 2 tbsp honey
- 2 cloves garlic, minced
- 4 tbsp low-sodium soy sauce
- 1 tsp. sesame oil
- 1 tsp. ground ginger
- Chilli paste
- To Serve:
- 1 tsp Sesame seeds

- Preheat the oven to 180 degrees.
- Mix the meatball ingredients together with your hands and then roll out into small, evenly sized meatballs. Season well with salt and pepper.
- Lay them out onto a baking tray and place in the oven for 25 minutes, or until the balls are cooked through.
- Add all the ingredients for the sauce into a saucepan, and bring to a boil, stirring regularly. Reduce the heat and allow to simmer on low for 10 mins, or until the sauce has reduced and thickened.
- Once the meatballs are ready, add them into the sauce and mix around, coating them all evenly.
- Serve with noodles or rice, and sprinkle with sesame seeds.

- 1 Onion (chopped)
- 450g Turkey Mince (or lean steak mince)
- 3 cloves Garlic (crushed)
- 1 Courgette (sliced)
- 200g Chestnut Mushroom (sliced)
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Basil
- 4 tablespoons Tomato Puree
- 500g Passata
- 350ml Chicken Stock (or beef if using steak mince)
- 300g Dried Whole Wheat Fusilli (or 450g fresh)
- 1 tablespoon Balsamic Vinegar
- dash Worcestershire Sauce
- Salt & Ground Black Pepper to season
- 85g Freshly Grated Parmesan
How to cook:
- Spray a non-stick saute pan with low-cal cooking spray
- Add the mince, onions and garlic and fry until the mince is fully browned
- Add the courgette and mushrooms and cook for a further few minutes
- Add the herbs, passata, stock, tomato puree, balsamic vinegar and worcestershire sauce. Bring to a boil, then reduce to a simmer
- Pre-heat the oven to Gas Mark 4 / 180°C / 350F. Meanwhile, cook your pasta until al dente. If using fresh pasta, do not pre-cook.
- Once the sauce has thickened slightly, mix in the pasta and transfer to an oven proof dish
- Top with the parmesan and bake in the oven until the cheese is melted and golden, about 30 minutes

- Cook the spaghetti according to the packet instructions.
- Peel and chop the onion, carrot and garlic.
- Heat up the oil in a large pan, add the chopped onion and fry until golden.
- Add the minced turkey and stir well with a wooden spoon, breaking any lumps that may form.
- Continue to stir until the mince is brown all over, that should take about 10-15 minutes..
- Add the chicken stock and leave to cook on a medium to high heat until all the liquid has been absorbed, it may take up to 15 minutes..
- Add the tinned tomatoes and tomato puree and leave to cook for 10 minutes, stirring occasionally.
- Season with salt and pepper, add the Italian herbs, then remove from the heat and garnish with freshly-chopped parsley.
