  • 4 pieces Mahi Mahi (thawed)
  • 1 tablespoon olive oil
  • 1 pound asparagus
  • 1 cup chopped potatoes
  • 1 lime
  • 1 teaspoon Zaitarin's Cajun Seasoning or Old Bay
  • salt to taste

How to cook:
  1. Microwave the cut potatoes for 5 minutes to soften.
  2. Preheat your grill or oven to 375º F.
  3. Tear four pieces of tin foil.
  4. Add a piece of mahi mahi to each.
  5. Add the potatoes and some asparagus (or any other vegetable you like).
  6. Sprinkle the seasoning and salt/pepper over the fish and vegetables. Top with fresh lime slices.
  7. Drizzle olive oil over each and then fold up the foil. Fold up the foil packets and put onto the grill.
  8. Grill about 10 minutes and check. The potatoes should be soft and the fish firm.
  9. Remove the foil packets from the grill or oven and enjoy!

  • 12 oz Mahi Mahi
  • 2 lemons sliced (save ends)
  • 1 medium zucchini
  • 1 medium yellow squash
  • 1 C julienned carrots
  • approx. 40 fresh green beans
  • 3 scallions, chopped
  • salt and pepper to taste (may substitue lemon pepper seasoning)

How to cook:

  5. Slice zucchini and yellow squash and divide amoung 4 packets. Place on top of fish. Pile julienned carrots and green beans and scallions on top.
  6. Sprinkle with additional salt and pepper or lemon pepper seasoning if desired.
  7. Close packets by folding one side several times until it is snug to contents. Then fold front close several times and finish with other side. Place packets on cookie sheets and bake for 22 minutes.
  8. Be carefull of steam when opening packets. Plate and serve. Lemon juice can be squeezed from ends of lemons over fish just before serving.

How to cook:
  1. Preheat grill to medium-high. Spray 2 large pieces of heavy-duty foil.
  2. Par-cook quartered potatoes by placing on a microwave-safe dish and cooking on high for 4 minutes.
  3. In a medium bowl, combine zucchini, par-cooked potatoes, red bell pepper, onion, and broccoli.
  4. Drizzle 1 tablespoon oil, 1-1/2 teaspoon lemon juice and 1-1/4 teaspoons cajun seasoning over all. Toss to coat.
  5. Season fish with remaining olive oil and lemon juice. Rub in remaining cajun seasoning.
  6. Divide vegetable mixture between the two pieces of prepared foil.
  7. Place one fillet amidst vegetables on each piece of foil.
  8. Fold over foil making secure packets.
  9. Place on grill for 15 minutes.
  10. Remove from grill, open carefully as a lot of steam will be released and place on dinner plates. Garnish with slice of lemon and/or sprig of mint.
