Ingredients:
  • 2 cups mango puree (about three-four large mangoes), chilled
  • 2 cups heavy whipping cream, chilled
  • 1 cup of condensed milk, chilled
  • 1 1/2 teaspoons of vanilla extract
How to cook:
  1. Remove flesh from mango and puree in a blender. Most be a thick puree.
  2. In a medium bowl (or using your stand mixer), whip the heavy cream until stiff peaks form. About seven minutes.
  3. Add condensed milk in and combine.
  4. Add mango puree and mix in with a spatula along with the extract.
  5. Once mixed, add to air tighter container (or see notes for using a loaf pan) and leave in the freezer overnight.

How to cook:
  1. Peel, pit, and slice the mangoes: slice 2 of the mangoes into thin strips, and dice 3 into 1/2-inch pieces.
  2. Make the whipped cream by whisking the heavy cream in the chilled bowl of an electric mixer until thickened and medium peaks form. Whisk in the condensed milk.
  3. Place a layer of ladyfingers in a 13- x 9-inch rectangular baking dish. Fill in any cracks with graham cracker crumbs. Spread 1/2 of the whipped cream on the cookie layer, and sprinkle with diced mangoes. Repeat with another layer of ladyfingers, crumbs, and whipped cream. Top with mango slices.

How to cook:
  1. If you are using fresh mangoes, make a pulp by adding the mango slices to blender jar and grinding smooth. Strain if needed. Infuse saffron strands in 1 tablespoon warm milk and let stand.
  2. Choose a heavy bottom pot or kadai for making phirni.
  3. Add semolina to the kadai and roast on a slow stove for about 7-10 minutes making sure that the color of semolina does not change. Once toasted, it will smell very nice. Once toasted transfer semolina to a plate. Note - If you want, you can add 1-2 tablespoon of ghee while toasting (I feel phirni becomes quite heavy thats why I don't).
  4. Add milk to the pot/kadai and let come to a boil. On slow heat, let the milk reduce a little bit for 10 minutes.
  5. Next, add the semolina while whisking the milk continuously to avoid lump formation. Keep stove on slow. Cook the semolina in milk for 5-8 minutes on slow heat stirring continuously. You will notice that the phirni is quite thick already.
  6. Add condensed milk, the phirni will thin out again. Cook for another 5-6 minutes stirring continuously.
  7. Switch off the stove. Wait for 2 minutes and then mix in the mango pulp and saffron. Combine everything together till the phirni is yellow in color, depending on the color of mangoes and quality of saffron you use, the color will vary from pale yellow to deep yellow.
  8. Transfer the Phirni to a large bowl and cover the top with a a cling film to avoid skin formation. Bring to room temerature and chill. You can also set in individual bowls, cover with aluminum foil.Chill for 6-8 hours.
  9. Phirni is best served chilled. Add chopped nuts, fresh fruits or edible silver or gold leaf for decorating.You can make phirni 2-3 days in advance.For freezing, portion out the phirni and freeze for a week - ten days maximum.

How to cook:
  1. In a high speed blender, combine the mango with the orange juice, lime juice and condensed milk. Puree until very smooth, about 1 minute.
  2. Meanwhile, in a medium-sized bowl, beat the cream with an electric mixer on high until soft peaks form.
  3. Pour one quarter of the mango puree mixture into the beaten cream, and using a spatula, fold the mango into the cream very gently. You don’t want to deflate the cream, so take your time and scrape around the bowl and down the middle to fold the mixture together.
  4. Repeat with the remaining mango puree, one quarter of it at a time, until everything is incorporated.
  5. Divide the mixture between 4 small glasses, and refrigerate at least 4 hours (or overnight) before serving. To garnish: extra dollop of whipped cream and a few diced mango pieces and a mint leaf.
