Ingredients:
- 1 and 1/2 cups (188g) all-purpose flour (spoon & leveled)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup (115g; 1 stick) unsalted butter, softened to room temperature
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature preferred
- 2 teaspoons pure vanilla extract
- 1/2 cup (120ml) whole milk*
- zest + fresh juice of 3 medium limes*
- optional: 2 Tablespoons tequila (for brushing in step 5)
- 1 cup (230g; 2 sticks) unsalted butter, softened to room temperature
- 4 cups (480g) confectioners’ sugar
- 3-4 Tablespoons (45-60ml) tequila*
- 1 teaspoon pure vanilla extract
- lime flavoring (please see notes– there are options)*
- pinch of salt, to taste
- optional: lime slices, lime zest, and/or coarse sugar for garnish
How to cook:
- Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners.
- Make the batter
- Whisk the flour, baking powder, and salt together in a large bowl. Set aside.
- With a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter on high speed in a large bowl until smooth and creamy, about 1 minute. Add the granulated sugar and beat on high speed for 2 minutes until creamed. Scrape down the sides and up the bottom of the bowl as needed. With the mixer running on low speed, add the eggs one at a time, then add the vanilla extract. Beat on medium-high speed until combined. Scrape down the sides and up the bottom of the bowl as needed.
- With the mixer running on low speed, slowly add some of the dry ingredients alternating with some of the milk until all is mixed. Increase to high speed and beat in the lime zest and juice until incorporated. Try to avoid overmixing.
- Pour/spoon the batter into the liners – fill only 1/2 – 2/3 full to avoid spilling over the sides. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. For around 30 mini cupcakes, bake for about 11-13 minutes, same oven temperature. While still warm, brush finished cupcakes with tequila. This infuses extra tequila flavor. Allow the cupcakes to cool completely before frosting.
- Make the frosting:
- In a large bowl using a handheld or stand mixer fitted with a whisk attachment, beat the butter on high speed until completely smooth and creamy, about 2-3 minutes. Add the confectioners’ sugar 1 cup at a time, beating on low at first then increasing to high speed. Once incorporated, add the next cup. Once creamy and combined, beat in the tequila, vanilla extract, lime flavoring, and pinch of salt on high speed. Taste. Add more salt or flavoring as needed.
- Frost cooled cupcakes. I used a Wilton 1M tip for these photos. (Another favorite is this Wilton #12 round tip.) Garnish with lime slices, lime zest, or coarse sugar.

- 4 cups (500g) icing/powdered sugar
- 1 cup (226g) unsalted butter, softened
- 2 tablespoons tequila
- 1 tablespoon lime juice
- Pinch of salt
- 1 and 1/2 cups (190g) cake flour*

- Preheat the oven to 170C/325F/Gas 3. Line a 12-cup muffin tin with muffin cases, and set aside.
- Whisk together the flour, baking powder, baking soda, and salt. Set aside.
- Whisk together the eggs. Add the sugar, and whisk until combined. Add the butter, yogurt, lime juice, zest, and tequila, and whisk until combined. Fold in the dry ingredients.
- Divide the batter evenly between the muffin cases, filling only 2/3 full.
- Bake for 15 - 20 minutes, or until a toothpick inserted into the centre comes out clean. Allow to cool for 5 minutes in the pan, before transferring them to a wire rack to cool completely before frosting.
- Using a handheld or stand mixer fitted with the paddle attachment, beat the butter on high until pale and creamy - about 5 - 10 minutes. Add half of the icing sugar and, starting on low speed and working up to high, beat until light and smooth.
- Add the remaining icing sugar, and beat, starting on low, until smooth and combined. Add the tequila, lime juice, and salt, and beat on high until light and fluffy.
- Transfer the frosting to a piping bag, and frost the cooled cupcakes. Garnish with lime slices and zest.

- For the Cupcakes
- Preheat oven to 350 degrees and line cupcake pan with paper liners.
- In a large bowl, whisk together the flour,baking powder, and salt until combined.
- In another large bowl, beat sugar, butter, and eggs until combined. Then add in the lime juice, lime zest, 1 tablespoon tequila, and vanilla.
- Alternate between adding in the milk, and flour mixture until everything is just combined.
- Fill each cupcake liner ¾ full. Bake for 21-23 minutes.
- Remove from oven and allow to cool several minutes.
- Once cooled, poke holes into the cupcake and brush remaining tequila over the top using a BBQ sauce brush, or you can dip the top of the cupcake into a bowl of tequila. Cool completely.
- For the Tequila Lime Frosting
- In a large bowl, beat butter, lime juice, lime zest, and tequila until light and fluffy.
- Add powdered sugar a little at a time. Add heavy cream as needed to reach your desired consistency.
- Pipe with a star tip or spread frosting onto cupcakes. Top with a lime slice and a paper straw if desired.

Ingredients:
- 1 boxed vanilla cake mix + ingredients listed on box
- 1 lime, (juiced & zested (approximately 2 Tablespoons lime juice + 2 teaspoons zest))
- 2 Tablespoons tequila + additional 1-2 Tablespoons to coat top ((topping is optional))
- Garnish: Coarse green colored sugar or lime zest (colored straws, lime wedges, coarse salt)
- 1 cup butter, (softened)
- 5 cups powdered sugar
- 1/4 cup lime juice
- 3 Tablespoons tequila
- 3 Tablespoons Cointreau or Triple Sec
- Pinch coarse salt
How to cook:
- Cupcakes
- Preheat oven to 350 degrees. Line a muffin tin(s) with paper cupcake liners.
- Mix cake mix according to directions, reducing liquid by 2 Tablespoons.
- Stir in lime juice, zest and tequila.
- Divide the batter evenly between muffin cups.
- Bake for 12-17 minutes. Cupcakes are done when toothpick inserted in center comes out clean. (May need to be adjusted according to cake mix you use. Check box for cupcake baking times.)
- Remove from oven and allow to cool for 10 minutes on wire rack.
- Remove cupcakes from pan and allow to cool completely on wire rack.
- Frosting
- Place softened butter in bowl of electric mixer and beat on medium-high speed for 5 minutes or until light and fluffy.
- Lower speed and add sugar, whipping until well combined.
- Add remaining ingredients and beat until well mixed.
- If frosting is too runny, add a little more confectioner's sugar until desired consistency is reached.
- Frost cooled cupcakes and garnish with a sprinkle of colored sugar or lime zest, a lime wedge and a pretty colored straw which has been cut in thirds. An additional sprinkle of coarse salt can also be added.
