  1. Line a large plate with paper towels.

  • 5 slices thick cut bacon
  • ½ cup finely chopped onion
  • 2 large cloves garlic, minced
  • 8 ounces penne, rotini or rigatoni pasta
  • 2 cups chicken broth
  • salt and pepper to taste
  • ½ cup heavy cream
  • 1 cup finely grated Parmesan cheese
  • 1-2 teaspoons cornstarch
  • 2 tablespoons chopped fresh parsley

How to cook:
  1. In a large skillet cook bacon until crisp. Set on paper towel to drain. Drain grease, reserving 1-2 tablespoons in pan. Cook onion over medium heat until soft and light brown (about 2 min) stir in garlic.
  2. Add in pasta and broth and stir well. Bring to a boil, cover and reduce heat to a simmer. Cook for 13-15 minutes or until pasta is tender, stirring twice during cooking.
  3. In a small bowl combine cornstarch with a very small amount of water and stir into pasta. Remove from heat and stir in cream and cheese until cheese has melted. Garnish with chopped bacon and parsley. Taste for salt and pepper and add accordingly.

How to cook:
  1. Cook bacon
  2. Cook the bacon in a medium-sized pan over medium heat until crispy, about 10 minutes. Remove the bacon from the pan and pour out all but 2 tablespoons of the bacon oil.
  3. Caramelize onion
  4. Add the onion to the pan and cook until they are golden brown, about 10 minutes.
  5. Make mayonnaise
  6. While the onions are cooking, mix the mayonnaise and chipotle peppers in a small bowl.
  7. Toast bread
  8. Remove the onions from the pan and put the bread into the pan. Let it toast for 1-2 minutes, until lightly golden.
  9. Assemble
  10. Spread the chipotle mayo on the toasted bread then top with the caramelized onions, crispy bacon, tomato slices, and arugula. Put the other slice of bread on top then serve right away.
