  • 4 slice sandwich bread
  • 1 1/2 lb. ground sirloin
  • 1 1/2 lb. ground pork
  • 2 small onions
  • 6 clove garlic
  • 1/2 c. chili sauce

Using your hands, mix until combined; do not overmix or meatloaf will be dense.
  2. Divide mixture in half. Gently pat each half into a log, and place each log in an 8 1/2 -by-4 1/2-inch loaf pan. Do not press down or into corners.

  4. Remove from oven; let rest 5 minutes. Turn loaves out of pans; slice each into eight 3/4-inch-thick slices.

  1. Preheat oven to 375f.
  2. In a large mixing bowl add the breadcrumbs, milk, egg, and 1/4 of the jar of chili sauce - about 1/4 cup. (Reserve the remaining chili sauce to spread on the surface of the meatloaf before baking).
  3. Add diced onion, minced garlic, parsley, and seasonings. Stir to combine.
  4. Add ground beef and thoroughly combine. Mix without compacting the meat too much.
  5. Add the mixture to a loaf pan (or free form on a baking sheet lined with aluminum foil). Mound and gently shape into an oblong and domed shape.
  6. Spread the remaining chili sauce over the surface. It will seem a bit thick but as it cooks it will bake into a lovely glaze.
  7. Bake on a lined baking sheet to catch any juices that might run over. Cook 50 minutes to an hour or until done. Monitor the last 15 minutes of baking to make sure it doesn't over-brown.
  8. Allow to cool slightly before slicing.
