A great way to grill fish, and it's not the same old breaded or fried fish. Delicious marinade that would be great on chicken as well as fish.

A great way to grill fish, and it's not the same old breaded or fried fish. It's low in fat, calories, carbs, cholesterol and sodium. You can use pretty much any type of white-fleshed fish for this.

Ingredients:
  • 3 garlic cloves, minced
  • 4 tablespoons fresh basil, chopped (or use 1 tbsp dried basil)
  • 1 tablespoon fresh parsley, chopped (or use 1 tsp dried)
  • 2 tablespoons lemon juice (fresh squeezed is best, but the bottled stuff will also do)
  • 4 fish fillets
  • 4 green olives, chopped (optional)
  • 4 lemon slices (thinly sliced)
  • fresh ground black pepper (to taste)

How to cook:
  1. Lay down a piece of aluminum foil on the grill to cook on or use a grill pan designed for grilling fish on a BBQ.
  2. Heat grill to medium heat.
  3. In a small bowl, combine the garlic, basil, parsley and lemon juice.
  4. Spray the foil or grill pan with cooking spray. Be careful not to spray directly on your heat source, or you'll get a flare up.
  5. Place each fillet on the grill and spray the fillets with cooking spray.
  6. Top each piece of fish with equal amounts of the garlic mixture. Sprinkle with black pepper to your liking.
  7. Grill over medium heat turning once until the fish is cooked through, about 10 minutes.
  8. Garnish with green olives and lemon slices.

Delicious marinade that would be great on chicken as well as fish. Full of fresh herb and citrus flavours. I usually use Flake fillets bbqed for a minute and a half a side - superb. (Cook time is marinade time)

  • 4 tablespoons olive oil
  • 4 tablespoons fresh parsley, finely chopped
  • 4 tablespoons fresh coriander, finely chopped
  • 6 tablespoons fresh lemon juice
  • 1 lime, juice of
  • 3 garlic cloves, crushed
  • 4 teaspoons paprika
  • 2 teaspoons cumin

MEDITERRANEAN GRILLED FISH
Soak an Oak or Cedar Plank in water for 24 hours. If you don't have a plank, add oak or cedar chips to the grill once it is lit. The oak or cedar adds a lovely smoky flavor.

Ingredients:
  • 1 Cup Nonfat Greek Yogurt
  • 1.5 pounds of thinly sliced white fish. Flounder, Amber Jack, etc.
  • 2 sprigs of fresh rosemary
  • 8 teaspoons Dijon mustard
  • 1/3 Cup dry white wine
  • 1 heaping Tablespoon fresh oregano
  • 2 heaping Tablespoons fresh Rosemary
  • 1/3 Cup packed fresh basil
  • 3 Cloves of Garlic (less or more to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1 teaspoon paprika
  • 1 Cup of lightly toasted pine nuts
  • Fresh lemon wedges for garnish and finishing
How to cook:
  1. Preparation
  2. Finely chop everything, except for the first three ingredients. I use my bullet blender and pulverize the ingredients until very smooth. Place the mixture in a bowl, add the yogurt, and mix well. Cover the fish with the sauce and marinate for one hour in a non-reactive dish. Take the plank out of the water and pat dry. Put the fillets on the plank and keep the marinade on the fish. This will be messy. Slowly grill the fish over a medium heat for 10-20 minutes. Grilling time will depend on the thickness of the plank. Before closing the grill, put the rosemary sprigs on the coals. If you are not using planks, put some aluminum foil on the grill and put the fish on top of the foil to cook. Sprinkle the cedar or oak chips on the grill prior to closing the grill. Grill until the fish is flaky and finished. This will take approximately 10-20 minutes. Drizzle fresh lemon on top - if desired. Enjoy.

  • 1 each whole striped bass,branzino, or red snapper, (scales removed)
  • 1 each small lemon, (sliced)
  • 1 each bay leaf
  • 1/4 each bunch Italian parsley
  • 6 each sprigs thyme, (divided)
  • flaky sea salt, (as desired)
  • 1/4 cup olive oil
  • 1/4 cup castelvetrano olives, (pitted)
  • 2 cups heirloom tomatoes, (cut into 1 inch pieces)
  • 1 1/2 cups white wine
  • 1 each bulb fennel, (sliced 1/4 in thick)
  • 1/2 each shallot, (sliced thin)
  • 1 clove fresh garlic, (whole)
  • 3 each cippolini onions, (cut in half)
  • parsley oil for serving, (optional*)
  • fresh basil, (for serving)
How to cook:
  1. Grilled Fish
  2. Preheat the grill to 375F.
  3. Score the fish a few times on each side from the top toward the belly about 1 1/2 inches apart.
  4. Season the cavity with salt, and fill with parsley, 3 sprigs of thyme, a bay leaf and sliced lemon.
  5. Secure with butcher's twine to keep the herbs and lemon in the cavity if desired.
  6. Drizzle the fish with olive oil and sprinkle with salt.
  7. Place the fish directly on the grill grates and grill until cooked through, about 20-25 minutes.
  8. Wine Braised Heirloom Tomatoes and Fennel
  9. Preheat a grill safe braising pan over medium heat.
  10. Add olive oil, fennel, cippolini onions, and the garlic clove and sautée for 2-3 minutes until the fennel is translucent.
  11. Add the tomatoes, olives, 3 sprigs of thyme, a teaspoon of flaky sea salt, and white wine.
  12. Bring to simmer, then transfer to the grill and cook uncovered 20-25 minutes until the tomatoes start to break down, and the wine is slightly reduced.
  13. Serve with the grilled fish and spoon sauce over the top.
Notes: Mediterranean Fish Fillets Recipe, Preheat oven to 375°F. Take a non stick baking dish and add the fish. Gently salt and pepper the fish. Bake for 12 minutes but if the fish is over 1-inch
