Melt-Away Butter Cookies are simple and classic buttery cookies that melt in your mouth. These easy cookies are made using a cookie press to create perfect bite-sized morsels.

Ingredients:
  • 1 1/4 cups (2 1/2 sticks, 10 ounces) unsalted butter, softened (See Tip 2)
  • 3/4 cup (3 ounces) confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
  • 2 1/2 cups (12.5 ounces) all-purpose flour

How to cook:
  1. Preheat oven to 325°F.
  2. In a large bowl, cream butter with electric mixer on high speed. Add confectioners' sugar, vanilla extract and salt. Beat on high until light and fluffy. Add flour. Beat on low just until combined.
  3. Fill cylinder of cookie press with dough. Press cookies onto ungreased cookie sheet. (See Tip 2)
  4. Bake in preheated 325°F oven for 15 to 17 minutes or until cookies are golden brown around the edges. Cool on wire rack.
  5. Store in airtight container.
  6. Yield: 7 dozen cookies.

  • 1/2 cup butter, softened
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup confectioners' sugar

How to cook:
  1. In a mixing bowl, cream butter, oil and sugars; add egg and vanilla and mix.
  2. Combine flour, baking soda and cream of tartar in a separate bowl; gradually add to the creamed mixture.
  3. Chill for several hours or overnight (I've made these and have only chilled them for 2 hours and they turned out fine, however when I've chilled them for several hours they were perfection!).
  4. Drop by rounded teaspoonfuls 2-inches apart onto ungreased baking sheets.
  5. Flatten with a fork dipped in flour; sprinkle with sugar.
  6. Bake at 350° for 12-15 minutes or until lightly browned.
  7. Cool on wire racks.

How to cook:
  1. Preheat the oven to 350 degrees and line a baking sheet with a baking mat or parchment paper.
  2. Combine the sugar and butter in a large bowl and beat until light and fluffy, about 2 minutes. Add the vanilla and combine. Add the flour and cornstarch and mix on low speed until well combined.
  3. Cover the cookie dough and refrigerate for 30 minutes.
  4. Shape the dough into round 1-inch balls and place a few inches apart on the cookie sheet. Bake for 10-12 minutes or until the edges are lightly browned. Let the cookies cool on the baking sheet for one minute and then remove and let them cool on a wire rack.
  5. For the glaze, combine the powdered sugar, butter, vanilla extract and enough milk for desired glazing consistency in small bowl. Drizzle or spread the glaze over cooled cookies.

  6. Step 5 - Flatten the cookies using the bottom of a glass and bake at 350 for 7 minutes.
  7. Pull the cookies out when they appear to not be cooked completely, they will continue to cook on the pan.
