Ingredients:
  • - 1 cup Arborio Rice (use regular short grain rice if absolutely necessary)
  • - 2 cups water
  • - 1/2 lemon rind
  • - 1 can evaporated milk (12 ounces)
  • - 1 can sweeten condensed milk (14 ounces)
  • - 2 sticks cinnamon sticks, plus more for garnish
  • - 1 teaspoon vanilla extract
  • - 1/4 teaspoon salt
How to cook:
  1. Arroz de leche is not difficult to make and your kids will beg for more!
  2. In a saucepan over medium heat, bring rice, cinnamon sticks and lemon rind to a boil in water. Reduce heat once boiling to low and cover. Simmer for 10 to 15 minutes, or until rice is tender and plump.
  3. Remove lemon rind with a slotted spoon. Over low heat, add evaporated and condensed milk. Stir constantly to thoroughly combine. Add salt and vanilla extract. Continue to cook on low heat for 7-10 minutes, or until the pudding thickens to desired consistency.
  4. Remove from heat and serve immediately. Or, store in the fridge in an air-tight container.

  • 2 cups water
  • 1 cinnamon stick
  • 2 inches (5cm) lime zest
  • 1 cup rice
  • 1 quart (liter) milk
  • 3/4 cup (150g) sugar
  • 1/4 teaspoon salt
  • 4 egg yolks
  • 1/2 teaspoon vanilla extract
  • 1/4 cup (40g) raisins
  • ground cinnamon, (for garnish)

How to cook:
  1. In a medium saucepan, bring 2 cups water to a boil. Add the cinnamon stick and lime zest, cover and simmer for 5 minutes over medium heat. Add the rice, return to a boil and stir once. Cover and cook over medium-low heat for about 20 minutes or until the water is absorbed and rice is tender. If the rice is still underdone but there is no water left, add some more water and cook for few more minutes.
  2. Stir in the milk, sugar, salt, and simmer over medium-low heat, stirring frequently, until the liquid starts to thicken, for about 20-25 minutes. Remove from heat and discard the cinnamon stick and lime zest.
  3. In a bowl, beat the egg yolks and stir in the vanilla extract and a few tablespoons of the hot rice. Stir the yolk mixture back into the rice. Mix in the raisins, leaving few for garnishing. Spoon into dessert dishes, sprinkle with remaining raisins and the ground cinnamon. Serve warm, chilled or at room temperature. Enjoy!

  • 7 cups water
  • 1 cinnamon stick
  • 1 cup whole milk
  • 12 oz evaporated milk
  • 14 oz sweetened condensed milk

How to cook:
  1. Combine rice, water, and cinnamon stick in sauce pan. Bring to a boil on medium-high, and cook uncovered until rice is tender, about 18 minutes.
  2. Discard the cinnamon, strain out the water, and return the rice to the pan.
  3. Add the whole, evaporated, and condensed milks to the rice.
  4. Bring to a boil on medium-high, and cook uncovered until the mixture has thickened, about 20 minutes. Stir often to prevent rice from sticking to the bottom of the pan.
  5. Turn off heat and stir in raisins.
  6. Serve, topped with ground cinnamon for garnish.
