This creamy ground beef fajita casserole recipe is an easy-peasy, no fuss alternative to traditional fajitas and very tasty. You will still need a real ‘sizzling’ fajita fix occasionally, but when you get a craving, and have no time, this dish is sure to please.

Ingredients:
  • 1 lb lean ground beef
  • 1 green bell pepper, chopped
  • 1 orange or red bell pepper, chopped
  • 1 medium onion, chopped
  • 1 package dry fajita mix ((*GF if desired))
  • 1 cup sour cream ((*GF if desired))
  • 1 cup cup shredded Mexican style cheese ((*GF if desired))
  • 1 10 oz. can Mexican Style tomatoes with garlic ((*GF if desired))
  • 1 cup water
  • 1/4 cup cold water (for use with corn starch)
  • 2 tbsp corn starch ((*GF if desired) add to container with ½ c. water and shake to combine well)
  • 1 11 oz. bag tortilla chips ((*GF if desired))
  • 5 green onions chopped

How to cook:
  1. Preheat oven to 375 F
  2. Prepare bottom of casserole dish lightly with olive oil and add one layer of chips to bottom.
  3. In a large skillet, brown ground beef over medium heat. Drain excess fat if needed.
  4. Add chopped onions and bell pepper.
  5. Cook over medium heat for 5 minutes, stirring to brown onion and bell pepper slightly.
  6. Add fajita mix, 1 cup water and one 10 oz can Mexican style tomatoes with garlic. Bring to a boil. Reduce heat to a medium simmer.
  7. Add corn starch and cold water mix stirring constantly until slightly thickened. Cover and simmer for 5 minutes.
  8. Remove from burner.
  9. Fold in sour cream and ½ cup shredded cheese into precooked mixture.
  10. Spoon or pour half of cooked mixture on chips in casserole dish.
  11. Sprinkle with ¼ cup shredded cheese.
  12. Add another layer of chips to casserole dish and repeat steps as above ending with sprinkled shredded cheese.
  13. Cook in oven for 15 minutes.
  14. Top with green onion when serving. Serve with a side of refried or charro beans.

  • 2 large ripe avocados, halved and pitted
  • 2 tomatoes, finely chopped
  • 1 small onion, chopped
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • 2 tablespoons minced cilantro
  • ½ teaspoon salt
  • 1 pound ground beef
  • ¾ cup water
  • 1 package taco seasoning mix (such as Ortega®)
  • 1 (16 ounce) can refried beans
  • 1 (16 ounce) can black beans, drained and rinsed
  • 1 (8 ounce) can tomato sauce
  • ½ cup shredded Mexican cheese blend
  • 1 (8 ounce) container sour cream
  • 6 scallions, chopped

How to cook:
  1. Chop avocado flesh and mash in a bowl. Add tomatoes, onion, lime juice, garlic, cilantro, and salt. Cover with a lid or plastic wrap and refrigerate guacamole until ready to serve.
  2. Preheat the oven to 375 degrees F (190 degrees C).
  3. Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add water and taco seasoning; stir until combined. Simmer until thickened, 3 to 4 minutes.
  4. Spread refried beans into the bottom of a 9x13-inch baking pan. Top with black beans. Spread ground beef mixture on top of beans. Drizzle tomato sauce over the whole mixture.
  5. Bake in the preheated oven for 15 minutes. Sprinkle Mexican cheese blend on top. Continue baking until cheese is melted, about 1 minute more.
  6. Top each serving with guacamole, sour cream, and scallions.
